  • I eat at and review the 8 course Chef’s Tasting Menu at the three Michelin Starred fine dining seafood restaurant Le Bernardin in Midtown Manhattan of New York City. Chef Éric Ripert and the restaurant have received many awards since the establishment opened. Le Bernardin remains one of the best restaurants in the world.

For Eric Ripert, Buddhism and deep appreciation for love. I had a chance to listen to him at a coaching/leadership event many many years ago and he stressed that everything in life comes with pressures and pain (Buddhism), but the challenge is to focus not on that (which is the normal human instinct), but on love. And often, what/who you love puts you in those painful situations to begin with. So he finds that peace and that keeps him going. And it's also why he's got so few restaurants when other people of his caliber have so many. He only expands or does something that he can say he loves.

Marco Pierre-White once said the hard thing is to get to 3 stars and after that it's a well-oiled machine, as longas you stay behind the stove it will keep up. What's hard isn't service at this level anymore, it's work-life balance.

@@jas_batailleand then he gave the three stars back because he did not want to be judged my Michelin inspectors who knew less than him. Weird , it were the same inspectors who gave the stars in the first place . White is not a very relevant chef anyway . Lots of drama .. that’s it .

eating a truly special place is always worth the money. My grandparents treated me to a really nice Chinese restaurant for my High school graduation and I STILL remember the fried scallops dish I had that night. That's a huge part of my personality; I love doing things by myself and getting to enjoy every little bit of an experience (like fine dining) without having to entertain someone every second. I've gotten weird looks from people when I've dined alone at very high-end restaurants. Whatever, totally their problem! I'm enjoying myself like you did! So cool, i love watching this video. I was actually employed at LB in 2015, when Aldo Solm opened up his wine bar next door. I worked with amazing chefs and sous chefs who are now super successful. I was just a low cook on the totem pole, but it's so cool to see your experience from the guest perspective. Just as you stated, LB is a machine of a restuarant, and we do High volume fine dining, and I was so humbled that i was able to hang with the best of the best in that kitchen. Although, the experience wasn't glamorous, what I got was so worth while, and has molded me into the chef i am today. Great video! Recommend reading his book "on the line". Very true and real book, and Vinnie, the Saucier, is legendary. I ate the "lounge" menu during restaurant week there, and Vinnie's boiullabase sauce was serisously the most life changing sauce i have ever eaten. There is no other sauce operation in NYC like LB. They prepare over 15 different sauces Daily, and it's all done the 2 sauciers. They make everything from scratch. No shortcuts, Old school french. That's why they have 3 stars. And Chef Chris Mueller is God in that kitchen,. I loved watching him run that kitchen, and teaching sous below him how to delegate and be great. Such a good chef

When I went here the thing that stood out the most was the service. The waiters moved so quickly yet smoothly, like ghostly ballerinas. At one point they replaced the butter dish and neither I, nor my friend noticed. We were both genuinely shocked when we lifted up the cloche expecting to see half eaten butter, but to find it has been replaced with a new one. The food was obviously excellent too. The highlight was a lobster in a lemongrass broth, so delicate and clean.

Great video! Thanks for not being obnoxious in any way and not overly gushing (as I have seen from others) but rather honest and genuine. Love that you enjoyed it so much, too! I hope it won't be the last of your top fine dining experiences 😉 it was getting emotional towards the end...I agree, it's nice to go with others but sometimes things don't always work out like that but that shouldn't stop you from seizing the opportunity when it appears.

James, this was the first video of yours that I’ve seen, and what a treat! As a lifelong New Yorker, Le Bernadin has been on my “someday” list as well. For awhile, friends of mine and I would do a Michelin star restaurant every month, which was a wonderful experience, but the group broke up before we got to Le Bernadin. Thank you so much! That sounded like a great group. It's hard to find people that really appreciate fine dining especially with the high prices those restaurants command. You have a talent for talking about your food experiences! I'm a new subscriber because of your presentation and his background information you discussed! ❤
One thing to note, the breads should never be bitten into; instead, break off a mouth-sized piece and then butter it. This is really helpful when eating a hard roll or baguette. It stops you from yanking and pulling on the bread with your teeth. Small bites are better than big, wide open mouth bites of any food. This is a more refined manner of eating bread at restaurants.
