Technically there are more showtimes, but they're from a spinoff game (Persona 5 Strikers) and aren't quite the same thing. And you're right, they are basically a super move. They aren't guaranteed to finish off the enemy but they hit a lot harder than regular attacks and they don't cost anything to use, just you can't control when you have access to them. The showtimes in Royal have two variations for each attack, the first is for regular enemies, the second variation is used for bosses and doesn't include the monster being attacked in the animation. I'm pretty sure they picked those bosses for the demonstrations just because of the background music, it's called Rivers in the Desert and it's great on its own but fantastic in context.
You might also like the all-out attacks but those are a lot shorter; it's only if they finish off the enemy there's a short animation of the character who initiated it and then an anime-style image of that character.
And the girl at the end is Yoshizawa, code name Violet, and the girl who looks just like her is her sister. They're not twins they just look basically identical, a large part of her arc is about their relationship. And other stuff but spoilers.
I will always recommend people play the game but there is an anime based off the original release of the game if that's more your speed. The Royal re-release of the game added a lot of content that the anime doesn't include (Yoshizawa as a character for example) but the original storyline is solid even without the Royal stuff.

There are 2 versions of each showtime. One that shows the enemy, one that doesn't. I guess the animation looked weird on some enemies, so they made a separate, but similar one from the enemy POV so they didn't have to adjust to the weirder/bigger enemies.

The one that doesn't is for the bosses, I think.
