The cookies are a good idea! I make a regular zucchini bread, a spice cake flavor, a chocolate flavor & a pineapple/raisin/walnut flavor. I really like this recipe for the chocolate one, tho & am going to try it. 🤗
My recipe is similar to yours, but it has a bit of cinnamon in it. My kids weren’t home the first time I made it, and if I had told them it had zucchini in it, they probably wouldn’t have eaten it. I told them that I had a new recipe for brownies! They loved them, as did their friends!

It doesn't have to be cooked. Fresh zucchini works great.
