Serves - 2-3 People
Ingredients -
Chicken & Marinade -
700g (1.5lb) - Chicken Thigh (Can be substituted for chicken breast)
100g (3.5oz) - Honey (I used Manuka Honey)
85g (3oz) - Wholegrain Mustard
22g (0.7oz) - Dijon Mustard
5 - Garlic Cloves, Minced
Salt & Pepper To Taste
Remaining Ingredients -
250g (8.8oz) - Streaky Bacon, Diced
5g (0.2oz) - Flat Leaf Parsley, Roughly Chopped
5g (0.2oz) - Thyme, Roughly Chopped
125ml (4.2floz) - Chicken Stock
400ml (13.5floz) - Full Fat Cream (Whipping Cream/Heavy Cream)
Storage & Reheating Instructions -
To store this, place it into the fridge in an airtight container for up to 3 days and it can be frozen in an airtight container for up to 3 months.
To reheat from fresh, place it into a pan over medium heat and gently heat it until hot. Note, I recommended adding a splash of fresh full fat cream to help prevent the sauce from splitting.

Serving Ideas -
This dish is fantastic served with rice, salad, pasta, and vegetables. It can also be eaten on its own.

@@ChefJackOvens Ok Jack chicken is in the marinade I’m doing it slightly different I don’t have any bacon 🥓 I’m in the middle of moving lol but I’m sure it’ll be fine so I’m also using chook legs and I’m cooking them in the oven with the stock and most of the marinade then when the chook is cooked I’ll put it on the cooktop I’ll add some mushrooms the rest of the marinade then I’ll add the creme and thyme season to taste 👅 lol and see how it turns out. Wish me luck lol. Thanks for the recipe.

Loved this recipe, very easy & tasty. Thanx Chef Jack 🙂Be careful when cooking the chicken thighs as the marinade contains honey it easily burns especially if you have to cook in batches. I had to discard some of the burned marinade as it would have ruined the dish. Also "my opinion" is that 400ml of cream was too much for this dish & amount of chicken & next time I will take it back to around 300ml.

Just made it and the taste of the dish was so good that I ate the whole thing.
So, since I don't eat beef or anything related to beef so can I use chicken stock instead of beef stock in French Onion Soup.

Yes it can. When you remove the bacon from the pan, keep the fat in the pan and use it to cook the chicken. Olive oil isn’t bad for you though. 😊
