    हम इसे काली गाजर से बनाते हैं।काली गाजर से एक तो रंग बहुत सुंदर आता‌है , दूसरे बहुत अधिक पौष्टिक होती हैं। काली गाजर में आयरन की मात्रा अधिक ‌होती है।होली के आस पास के दिनों में बनाते हैं। इन्हीं ‌थोड़े दिनों में ही काली गाजर मिलती है। 🥕

    हमारे यहां इसी प्रकार से पानी में नमक, राई लाल मिर्च पाउडर तथा हींग डालकर अचार बनाया जाता है, जिसमें आलू, गाजर तथा सफेद सेम को उबाल कर डाला जाता है, बिना धूप दिखाये यह 15 दिन तक चल जाता है। हमारे घर में इसे आलू का अचार कहते हैं।
