If you live in Australia like me, I can recommend using that cheap sadnwhich meat that comes in a HUUUUGE sausage- Devon- just dice it up and fry away- my Asian housemates and I in college use to fry it with various sauces and eat it as a sort of “banchan”/ side dish. With plain steamed rice- it’s surprisingly good!

There's a turkish sausage called "socuk" (also big in Azeri & Armenian foods)- for all my Eastern Mediterranean friends this would be a great spicy substitute!

Watched this while coincidentally eating my kimchi fried caulirice for lunch at work. I know not using actual rice is probably akin into sacrilege but I'm trying to eat more veggies. Mine was cooked with a beyond meat (faux) bratwurst and a fried tofu "egg". My well aged homemade kimchi was the star ⭐ (your recipe btw😉)
How do you manage the kimchi odor tho? It smells rather strongly especially if it has been imprisoned in a food container for some time. I can't help but worry about your coworkers
