Reduce calorie absorption by cooling & refrigerating cooked rice overnight then consume in a cold or reheat recipe. Cooling rice changes the rice grain structure to create "resistant starch" which is unavailable for human digestion but as a plus feeds essential gut flora which keeps humans healthy. Acids like vinegar or lemon juice also slow down the starch digestion
is the cooked rice be cooled at room temperature (cool) first before putting in the fridge or the cooked rice can be stored directly in fridge after 5 minutes cooling time (cooked rice is between hot and warm). thank you very much for your advice.

Chhaya J, completely agree. Cooking the rice as in the video actually doesn't reduce the starch content of the rice, at all. The addition of coconut oil to the cooking water, and the cooling/refrigeration/reheating process, combine to change the physical and chemical compounds of the rice.
