- These addictively delicious buttery Cashew Nut Cookies are really easy to make. It has a crumbly sandy texture and a fabulous nutty flavor。

Ingredients 食材料:
180g cashew nuts (For Topping) 180克腰豆(装饰)
120g cashew nuts(toasted & ground) 120克腰豆(烤熟并磨碎)
250g salted butter (softened) 250g 咸牛油(软化)
100g icing sugar 100克糖粉
300g plain flour 300克普通面粉
30g corn flour 30克玉米粉
1/2 tsp baking powder 1/2 茶匙发粉
For egg yolk wash 蛋黄液:
1/2 tsp water & an egg yolk
1/2茶匙水和一粒蛋黄
can make 76 pieces(10g each)
可制作 76 粒腰豆饼(每粒10 克)

Can I use vege oil or corn oil instead of butter?
Good Afternoon. Yes you can use vege oil or corn oil as replacement instead. due to the the butter is not as liquid as the vege oil. Hence, same volume replacement for sure will end up too wet the dough. Try to start with 150g vege oil, add in gradually , knead by hand thoroughly until icing sugar dissolved completely. If the dough is too dry ,add in additional oil or vice versa, until you get a soft and smooth dough. As you know my recipe is using salted butter, to enhance the salty taste you can add 1/2 tsp salt (optional). Happy baking & Happy CNY. Have a nice day. Thank you❤🙏
