Ingredients:
Fresh Arrowhead
Salt
Curry Powder
Curry Leaves
Instructions:
1.Clean Arrowhead and peel them, keep the stems.
2.Prepare a bowl of saltwater to soak the peeled Arrowhead. (To prevent the Arrowhead oxidising & turning black)
3.Rinse the Arrowhead thoroughly with water, and spread the Arrowhead on a large platter, place under the sun to let excess water evaporate. Alternatively, refrigerate them overnight to absorb moisture for a crispier texture.
4.Pour oil into a pan, heat it on high, then reduce to medium-low heat before slice the Arrowhead into the hot oil. (Hold the stem of the Arrowhead while slicing help to avoid cutting your hand.)
5.Wait until bubbles around the Arrowhead slices disappear, then stir and fry until uniformly light golden brown. (You can add curry leaves at this point.)
6.After draining excess oil, add salt or any preferred seasoning to enhance the flavor, then transfer to a jar. Enjoy!

新鲜芽菇
盐
咖喱粉
咖喱叶
做法:
1.芽菇洗净后去皮(留下蒂)
2.准备一盆盐水盛装去皮后的芽菇(可防止芽菇氧化变黑)
3.倒掉盐水后清水洗净芽菇,平铺在盘子,放置在太阳底下让多余水分蒸发;也可以放在冰箱隔夜吸干芽菇水分。这样炸起来更酥脆不容易回软。
4.锅中倒入油,大火让油热后,转小火将芽菇削入油锅内。(抓住芽菇蒂削就不怕划到手了)
5.等芽菇片周围消泡后,才搅动然后炸至均匀的微金黄(咖喱叶可这时加入)。
6.捞起控干油后,再加入盐或任何喜欢的调味料增添风味,再装入罐子即可。
