    Ingredients:
    - 2 - 4 pork loin cutlets
    - Salt and pepper, to taste
    - 1/4 cup all-purpose flour
    - 1 large egg, beaten
    - 1 cup panko breadcrumbs
    - Oil for frying
    - 1 onion, sliced
    - 2 carrots, cut into chunks
    - 2 potatoes, cut into chunks
    - 3 cups chicken or vegetable stock
    - 1 box Japanese curry roux (usually 100g)
    - Steamed rice, for serving

    Hi Rik, I’ve been meaning to make this for a while after getting some S&B curry blocks and this has given me the inspiration to make it now.
    I couldn’t get the Vermont brand but S&B is meant to be just as good?

      Kev, S&B is a great brand. I've used most of the available ones over the years. If you prefer, this can be adapted to chicken breast - butterfly a breast in two following the same procedure. Best, Rik

    Hi Rik. I used to obsess over _exact_ amounts, but since following your methods, I am slowly moving away from this and going more 'by eye'. To be fair (to myself) it was always bc I wanted to have the same amounts of the 'finished' dish, as I more often than not, I would put the curry(s) into the freezer in 'one-night' batches for all of the family.
    (btw, can we get those 'blocks' in Blighty?)

      Sounds like you have it cracked, mate. Yes, the blocks are available - I have just searched Amazon, and here is a link: amzn.to/3Sx0W0P - I don't have the capabilities to explore the supermarkets from here, but I'm confident I did see similar blocks in Sainsbury's when I was there a year ago. Only a couple of companies make them. These blocks make for a great substitute and a speedy Chinese-style curry. Just add a splash of sugar and soy sauce. Best, Rik

    RiK I want to buy you a new wooden spoon! Love your style and knowledge but that spoon was end of life even before the end broke off!
