  • We picked a ton of peaches, I made peach coffee cake with sourdough discard & sucanat glaze and have a huge pot of peach jam I’m going to water bath can - while all of that is going I’m cleaning out my fridge and pantry to make room for the summer harvest and preserves!

    I'm Steph, wife of John & mom of 4 living on a 5th generation homestead. My husband's great-grandparents bought this farm in rural Missouri in 1942. My husband was supposed to take the farm over after high school - but he decided to go a different direction and moved out on his own. At that time he said he'd never get married or have kids. But here we are - 4 kids later and back on the farm. I grew up in town - so farm life has been a new adventure for me and I absolutely love it. I'm learning as I go and opting out of as many broken systems as I can along the way. We've lived here almost five years now, we homeschool our kids here, raise and grow more of our own food all the time, and our last baby was even born here on the farm - my first home birth.     i know this is an old vid but i have learned from other youtubers if you put a little bit of butter in your pot while simmering it will reduce the amount of scum that forms on your jam.

    21:29 I used to not label a lot cuz I knew what was in there but I reuse the seals if they look fine, and I ended up with dill/garlic flavoured canned cherries. Soooo now I try label more

    I was so excited to hear that the peach coffee cake uses discard! Peaches and sourdough are two of my very favorite things. And I just love adding sourdough discard to my baking. I made a peach and blackberry cobbler with discard last week and it was so so good!

    If you add butter to your jam it won’t foam as badly. For a standard 4C of fruit you can add 1T butter or a “pat”.
    Also don’t waste the foam, it’s great on toast 😊

    I'm going to try that water bath canning method. I used to use a pressure cooker, water bath seems less complicated. Thanks.

    This looks so simple! Thank you for sharing this DIY. I have a nectarine tree that drop hundreds of nectarines. Do you think nectarine jam would be tasty? Do you have to wait until your peaches are all ripe before canning?

    Want to hear something silly? I only just found out 2 weeks ago and we’ve had chickens and ducks for over a year. Here in the UK, it’s against the law to feed chickens/ducks/ etc any table scraps. Any scraps need to go straight from the garden to the bird. They’re also not allowed dried mealworms, they have to be alive. After watching your dairy item making videos, I’ve been wanting a goat (a cow is far too big for our garden) and the laws and regulations around even a pet goat are crazy too. It makes me miss New York! 🫣
