recipe pumpkin bread
3 1/2 cups AP flour
2 t. baking soda
1 t. baking powder
1t. Salt
1t. cinnamon
1 t. pumpkin pie spice
3 c ups sugar
1 cup oil
4 eggs
15 oz. pumpkin puree
2/3 cup water
1 cup nuts
1 cup chocolate chips
350. 1 hour

I am 66 years old and remember my mom saving those 1 pounds coffee cans. She and a neighbor would bake breads every Christmas to exchange with other neighbors. 9ne year my dad snagged one for his shop, not realizing why mom had it. Needless to say, daddy was 8n more trouble than he knew how to get out of. He went to the store, bought another can of coffee, wrapped it in pretty paper and gave it to my mom. She kept it for the rest of her life, baked in it several times, then used it to put other things in. It got rusty and had to be gotten rid of after she passed, but I still remember that little coffee can being used with so much love and always with a smile for my daddy.

That was a cute story.....I would still have kept it no matter how rusty it got.....memories like that never fade.....sure you probably have a picture of it somewhere too eh? Love this story.....I think all men back then used coffee cans for nails etc....pretty sure my Dad had one too.....

I grew up in the 70's and had a similar experience. Back then we socialized with our neighbors. Everyone would bake pumpkin bread, banana bread and lemon bread in coffee cans. Almost every day of the week we would go to one of the neighbors or host a get together after dinner. The kids would get together in a room and come up with some sort of act to entertain the parents while they drank coffee. It was so much fun and the parents would laugh a lot so they enjoyed it. Those were good times.

Hello: Mrs Lori from another Arky, I grew up in Bauxite, Arkansas, but in 1967 I ran away to San Francisco at 16, and found refuge in a Church that was feeding the hippies on the street. They made bread in cans to give away, but they cut both ends out, then set them upright on a baking pan. When they came out of the oven you would take your Fist and push the bread out. They made whole wheat, Banana nut bread & carrot cake. We then put each loaf in a small brown lunch sack with a card that had the Roman Road to Salvation, and the address for the church. I just love this! What an amazing thing for a young adult to be involved in. Sadly kids today just don't get involved with this type stuff anymore. God bless you! There is no telling how many will greet you at the gates off heaven because you handed them bread that directed them to Christ. I just love it! 💖🙏👏

Hello Miss. Lori………. My Grandma Booker, sweet most kind person, I’ve ever known…… Southern born and bred………….. made Boston Brown Bread in a Large tin can ……. I dearly LOVED her !!!!! She always smelled so good !!!!!!!!! So did my Mom !!!! Funny what somethings we hold dear in our lives !!!🌹
My sweet momma loved anything pumpkin! I would make her favorite, my pumpkin cookies! I never cared for anything pumpkin, but I did like those cookies, but not as much as my momma did! Lord how I miss her! 😭💕💕💕
This is so interesting! It reminds me where I come from of brown bread in a can. I saw a thumbnail of pumpkin bread in mason jars today. I bet your are extra moist being baked in a smaller, more covered can. Oh my... what memories! My pap used to have sooo many coffee cans filled w stuff in his shed. A few years back, I had a beauty shop in my home. At Christmas time I would bake fruitcakes in cans. Regular size cans because most of the ladies were widows. They love them. I wrapped them each in cling wrap, foil, and gift wrapped them with a string bow. This makes a great homemade gift. I'll have to try your recipe in a coffee can. Thanks for sharing. I watch all your videos.
That's a great idea for fruit cakes.....I still have a fruitcake and one opened..... my Son sent me 2 for Christmas.....can't eat much of it at a time.....way too rich.....he remembers me always buying one at Christmas and only one brand and he found them .....I was surprised to get one.....I usually order one every year, but didn't last yr. because I still had one from the following yr....so now I don't need one this yr....siince I have two already opened and one not opened.....I keep in fridge in a mason jar once I open them....and they are just as fresh as they were the first day you opened them.....I keep a lot of things in mason jars.....I have choc. Christmas candy in one in the fridge...:) I never run out of Choc.....lol

Oh Miss Lori you are so clever. I have never thought to use cans as cutters. Has me thinking of different round shapes of cookies that I make and decorate. I love that you say oil the way I do. I grew up in Indianapolis, but lived in Texas so long I began to sound more Texan. I love this recipe. I will have to try it. I am always looking for fun things to take to our Wed night bible study at church. Praise the Lord, My hubby, an former atheist of 60 yrs got saved a few weeks ago. Prayers answered. My maternal grandparents homesteaded in 1959 in Willow, Alaska. My Gma used tin cans for baking bread and, once in awhile, she made "steam bread" with leftover dough. It was not browned on top, of course, but us Grandkids thought it was so special! Ah, I miss those days. We had a "two holer" outhouse and, honest to goodness, my Gpa shot bears through an upper bed bunk window screen --- much to Gma's dismay. They ate the darned bear and plenty of moose they killed - canned salmon was a staple. My Gma canned salmon in metal cans - I remember her turning the crank to seal the cans. I am blessed, @ 70 years of age, to have these memoies. To this day I have my Gma's treadle Singer and her electric Singer Fetherweight. I could live "off grid" no problem. I remember my dad attacking wires handles to the hills brother coffee cans and we would put them on a belt to go picking blueberries. That sound of the first berries hitting the bottom of a pail….you thought it would never get full, but it always did🥰💫💥

I remember my grandpa's coffee cans of nails screws bolts and stuff. I loved looking through them. There would be old keys screws and bolts washers nails and all of it smelled like grease rust and just old man. I absolutely loved that smell. I would always get in trouble if he caught me. "Get out of that! That ain't for kids! Go on, get outta here!" 😆😆😆 I loved that old man more than he could Have possibly ever known but little kids just wasn't his thing. Oh he loved us! But I think there were just too dang many of us. Lolol
i remember Mama baking my brother a birthday cake in juice cans and laying them down and frosting them to look like a train. The large can made the engine of the train and three small cans made the cars. i was so jealous of that cake....

Good morning from East Texas!! My grandmother made banana nut bread in coffee cans..☺️.. When I started using her recipe, I would keep the lids to the coffee cans and give the bread out as gifts at Christmas. 🥰🥰

I live in Hot Springs,Ar. Have made pumpkin bread with the same recipe baking in coffee cans for about 50 yrs. have used same cans. They don’t put coffee in these kind of cans anymore. They all have a lip on inside so bread wouldn’t come out. My daughter requests pumpkin bread baked in cans, she’ll say, not pans, but cans. Didn’t know the cheaper coffee can in the right kind of can, will be buying some veg. In big cans!
I love you to death!!! My mom AND grandma were Eastern city girls and were NOT the homey cooks... so I am having a wonderful time watching you and Mr. Brown enjoy life and teach me so much. You mentioned that you have never heard your Mommas voice. I just didn’t know that. I love that you and Mr. Brown have been together since you were, I think you said 14, or were you 15? My mother use to make Rye bread in metal juice cans. A round slice of Colby cheese and a piece of ham on top of the bread was so delicious! May have to get out my Rye flour and cans and get to work.

I remember years ago when my oven went out, I baked in a coffee can in my old upright Crockpot. Later, I would also use coffee cans in the oven. The breads made pretty gifts wrapped up in plastic wrap and Christmas ribbons.

My nana kept buttons in an old coffee can, I have it today and it’s full of antique button treasures. My dad uses peanut cans for his nuts and bolts on his workbench, they are all lined up, sorted by type of fastener.

Mama made her banana bread in a Maxwell House coffee can she kept just for that purpose! Just like her I have that can in my fridge with my bacon grease! Our screws and nails are sorted in cans of their own in the garage. Every June when school ended Mama gave each of us a LARGE coffee can. We were expected to put our old school supplies inside! Crayons, pens, pencils, erasers, scissors. If Mama found them laying around, out they went! Im going to try your recipe minus the nuts. Thanks for the video Lori. 💖

Yes, I still do that. I have a special baking tin I got when I lived in Australia. Over there they do lots of these plus steamed pudding.
If you do a RUclips search, you’ll see lots of Brits making plum puddings, and sticky toffee puddings in exactly the manner you described.
You can also buy the “pudding” tins online.

I guard my old 16 ounce coffee cans with my life, use them for brown bread. Went to get new ones, smaller and they have those pull tops on them so it leaves a ridge inside the can. Love cooking in cans. Thanks for letting all whom did not know it is possible and easy. My husband is going to try to make me new ones out of stainless, he is capable, now lets see if he has time.

I grew up with bread baked in cans..a few years back I had everybody saving their cans from vegetables..i drill a hole in the bottom n sed for seedling but I had a whole bag that weren't drill remembered my mom's can bread n made 50 tiny banana breads for my clients. Works good for kids too...they have their own little loaf😃 thanks for the memory

I use to make pumpkin chocolate chip breads and zucchini chocolate chip breads in coffee cans back in early 80s. My kids loved it and the marks made it easy to cut.
My cousin uses the Folger's plastic cans for over the tops of the fence posts so they don't rot. So many uses for so many things.

My mom used to bake her Polish sweet bread in coffee cans. That was a LONG time ago in the 50s but I still have the memory. I really like the way you can cut them into nice little pieces. Someone will get that final top piece - a very special person. Thanks for bringing back that wonderful memory and giving me a good reason to use coffee cans again.
I just found a recipe for Boston brown molasses bread that you make in tin cans. I’m going to try it. You cover the cans with foil and simmer in water on the stove to “bake” it
