Lay a couple of short pcs of 2x4 on edge, and set your pan in between them. Run a couple screws thru a pan hole on each side, to hold it in place while you're scraping gasket. Then you have two hands to work with.
Manufacturer actually suggest that after you hand tighten them, you’re supposed to wait an hour to 1.5 hours for the seal to cure.. and after the curing period you’re supposed to torque them to spec and let it sit 24 hours before you re-fill.
I also have a 2016 F150 with 83k miles..I'm getting different opinions on how often to change the fluid on the front and rear differential. I bought the truck used, but cannot confirm if it's ever been changed before. Any thoughts?
It's seems odd to remove one's differential cover, when replacing the lubricant. A waste of time (now you spend all that time and expense with replacing the differential cover). ¿¿ Doesn't one's vehicle's, differential cover have both (1) a fill plug AND (2) drain plug ?? If not, CONSIDER, an after market differential cover.
They don’t have a drain plug… the only way is to pump it out and refill.. but even then, I would rather remove the cover, check for excess debris, look at the wear in the gears and atleast then, I’ll be confident about the seal, if I do it myself.. it’s easy to f-- up, so I myself prefer to remove the cover.

No, trucks do not have a drain plug. I would day ever vehicle doesn't have a drain plug on the differential.
