Roasted Potatoes with Wood Nettle - Wild Food Under 2 Minutes

  • Wood Nettles, Laportea canadensis by the Latin name, is a common and popular wild edible in the eastern half of North America and there are many ways to serve them. In this video under 2 minutes we'll make some roasted potatoes with wood nettle. It's really easy and a great way to enjoy the bounty of the land. These can be served with anything you would serve with roasted potatoes. In this instance I served it with bacon, eggs, and sausage but this could easily accompany some fish or chicken. Get creative with your wild food, it might surprise you how easy it is to cook with wild edibles!

    I watched this whilst eating some Japanese noodle soup I made on the kitchen floor and the music made me feel like a peasant eating in a tavern …. Ps I love the recipe… will have to try it in a Month or so when the nettle are out in my neck of the woods

      Sounds good! I'll probably be trying your recipe here in the next week or so. I have some family coming up from down south and they've never tried nettles so I want to make a few different things for them.

Todays pesto tastes a bit green LOL Lots of chickweed, nettle, cleavers, only one dandelion leaf, some chives, garlic chives, nettle, a bit of chervil and ground ivy - salt, olive oil and walnuts. Tomorrow with pasta, though my husband prefers tomato sauce, might just make both.
