    ATTENTION: The recipe Yiayia uses is posted below but Yiayia herself DOES NOT follow it.
    Pastitsio:
    1 (12x18x2 inch) Baking Pan
    1lb. Macaroni (Elbow or long pieces)
    2 lb. Ground Beef
    1cup Chopped Onion
    1/4lb. Butter or margarine
    1tsp. all spice (ground)
    1/2 cup Tomato paste
    1/2 cup Water
    2 cups Grated Cheese (Romano)
    Salt & Pepper
    Cream Sauce (See Below)
    Cream Sauce:
    1/2 lb Butter or Margarine
    10 Tbsp. Flour (or corn starch)
    5 Cups Hot Milk
    4 Eggs, well beaten
    1 cup Grated Cheese
    Pastitsio Recipe:
    Brown onion in 4 Tablespoons butter. Add meat and brown until dry. Mix together water, tomato paste, allspice, salt, and pepper. Add to meat and simmer until liquid is absorbed. While Browning meat, cook macaroni as directed on package. Drain in colander. Melt 1/4 pound butter in pan used to boil macaroni. Add macaroni and mix to coat. Add 1 cup grated cheese; mixed together. Grease baking pan. Pour 1/2 of macaroni in pan. add meat, spreading over evenly. add remaining 1/2 of macaroni. Cover with Cream Sauce. Melt Butter in heavy pan. Add flour, 1 tablespoon at a time, stirring until slightly browned. Add hot milk to flour-butter mixture. Continue to stir until mixture thickens. Remove from fire. Trickle very slowly some of the cream mixture into eggs. Continue to mix to prevent curdling. Add cheese. Layer the cream sauce over macaroni. Bake in a 305F oven for 45 minutes or until brown. remove from oven. Cool for 30 minutes, then cut into desired serving pieces.

    please tell your yia yia i love her, and thank you. i miss mine so much! i wish i was old enough to have been able to learn from her. she passed when i was young and i found so many things i have such a passion for that she also did. Yiayia's are the best! Thank you for sharing her and her recipe with us

    She is beyond precious, I am just a Southern (antique) girl in the USA. We have totally different recipes for all fried foods, cornbread, vegetables , casseroles & certainly deserts. It just depends on the region where you are from. I imagine the same for Greeks. I love this recipe & add cinnamon, nutmeg, Greek oregno, bay leaf to my version. I am vegetarian & adapt all recipes to my needs. I think that to accept all versions of a classic recipe is most respectful. I love her heritage & ways of preparing a dish for her loved ones. Heartwarming & admired. Thanks for sharing.

    Yiayia is so cute. I make pasta in a similar way. I boil the water, add the pasta and turn off the fire. Cover the pot and check the done status after 1 minute after the length of time recommended then add the number minutes based on the doness.

    I'm Greek and I have cooked pastitsio a few times. I would say that too much butter has been used and more herbs could be used such as cinnamon, paprika, and nutmeg. But, in any case, I'll try to make your version and see how it tastes.

    I didn't see her add any spices or herbs. I always put a little cinnamon, and a dash of cloves and nutmeg and some chopped parsley in mine. I also layer it. I have never seen it not layered.
