    I usually cook the shorter side a little longer. It appears smaller lengthwise, but is thicker and fattier than the long part of the filet... If any of you are unsure, it’s ok to use a thermometer. When searing this way, I usually bring the internal temp up to 140 and then let it rest and come up to temp 145 while resting.

      @@greglem One side is more rounded and the cut side is always more flat. Season the top (rounded) side. Lay the thickest part toward the middle of the skillet or pan. Get the crust, flip, kill the heat, let it finish while you get plates ready.

      @@kennypowers7759 NOT facts. You can't "burn" something without smoke, and notice there is none here. Why are watching blackened videos if you don't want something a little charred anyway? Just boil yours and be happy.

      @@kennypowers7759 No, it isn't. The person making this video did a very good job blackening the fish. That's how it's supposed to be. Why would they call it blackened if it wasn't blackened?

      I always have to look this up before I make my spice blend, glad I did bc I had to run to the store to buy cumin. This will be the 5th time I’ve used this rub, it’s fantastic!!!
