Instant Pot Flan de Coco (an Easy Pressure Cooked Coconut Flan Recipe)

  • I am going to call this 𝐅𝐥𝐚𝐧 𝐝𝐞 𝐂𝐨𝐜𝐨 (Coconut Flan Recipe) Version 2.0. Many viewers liked my previous Coconut Flan Recipe video ( • Flan De Coco | Coconut... , but just as many complained that they could not find the list of ingredients provided in their area. Many others complain about the cooking time. Yes, many crème caramels, flans, caramel puddings, caramel custards, and other custard desserts can take a little bit of time, usually between 50 min, to an hour in the oven.
    So, in this Version 2.0 of my 𝐅𝐥𝐚𝐧 𝐝𝐞 𝐂𝐨𝐜𝐨, we are not only going to cut the cooking time in half, but we will tweak the recipe so that we are using more rarely available ingredients while lowering cost. To cut the baking time, I will use the infamous 𝐈𝐍𝐒𝐓𝐀𝐍𝐓 𝐏𝐎𝐓. If you follow my channel, you know I am not a big fan. I have never been an enthusiast of pressure cooking. I prefer the low and slow methods. I purchased the Instant Pot Dual Crisp for its air fryer capabilities, but, nonetheless, I will admit that it has a place in the kitchen. Many RUclipsrs recommend making in the Instant Pot any type of crème caramels, flans, caramel puddings, caramel custards, or custard dessert like this Coconut Flan since it can cut the cooking time by better than half.

    𝐈𝐧𝐬𝐭𝐚𝐧𝐭 𝐏𝐨𝐭 𝐅𝐥𝐚𝐧 𝐝𝐞 𝐂𝐨𝐜𝐨 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
    • 3 Whole Eggs + 2 Yolks
    • 1 Can of 𝐂𝐨𝐜𝐨 𝐋𝐨𝐩𝐞𝐳 𝐂𝐨𝐜𝐨𝐧𝐮𝐭 𝐂𝐫𝐞𝐚𝐦
    • 1 Can of Coconut Milk
    • ¼ Cup of Sugar
    • Pinch of Salt
    • 1 Tablespoon of Coconut Extract
    *As I mentioned in the video, I don't think the coconut milk added anything to the recipe. Evaporated milk is not only cheaper but probably a better choice. Add a little more coconut extract to make up for that additional coconut flavor.
    **More than one person who has had my Instant Pot Flan de Coco has recommended adding about one oz. of soft creme cheese! The creme cheese makes it more creamy, and I have a creme cheese flan recipe. I'll share that with your guys in the next few weeks.
    𝐌𝐚𝐤𝐢𝐧𝐠 𝐚𝐧 𝐈𝐧𝐬𝐭𝐚𝐧𝐭 𝐏𝐨𝐭 𝐂𝐨𝐜𝐨𝐧𝐮𝐭 𝐅𝐥𝐚𝐧
    Like most flans, a coconut flan is a very easy-to-make dessert. The part that throws everyone off is the caramel. There are many ways to make caramel, but in my opinion, a classic dry caramel is the way to go. To make it deposit ¾ of a cup of sugar into your flan mold or non-stick saucepan. Bring it temperature over low heat on my stove, about 1.5 on the dial, and wait. It is a good idea to shake up to get the dry sugar to mix with the melted caramel. Yes, this will take a little bit to get going, but once it does, you are good.
    With the caramel done, we can move forward with the flan. Mix three whole eggs and two egg yolks in a large mixing bowl. Along with one can of 𝐂𝐨𝐜𝐨 𝐋𝐨𝐩𝐞𝐳 coconut cream, one can of your favorite coconut milk, ¼ cup of sugar, a pinch of salt, and one tablespoon of coconut extract. Mix it well until everything is incorporated. Some people use a blender, but I think a large whisk and a little elbow grease does the job. Deposit the mixture into your flan mold, and let's set the Instant Pot. We are going to pressure cook, so we need one cup of water in the instant pot along with the trivet. Sit your flan mold in place, close the lid, set the vent to seal, and the timer to 20 minutes on high pressure. If you preheat the water, you can probably get away with 15 minutes. Once the timer expires, we'll do a quick pressure release, take the flan out of the instant pot, and let it cool down at room temperature before putting it in the fridge. Coconut flans take a little longer to set than a regular crème caramel, so consider refrigerating them for 6 to 8 hours. Coconut flans also don't keep as long as typical flans, so consider having them within three to four days.
    My friends, this is it. I hope you like this 𝐈𝐧𝐬𝐭𝐚𝐧𝐭 𝐏𝐨𝐭 𝐂𝐨𝐜𝐨𝐧𝐮𝐭 𝐅𝐥𝐚𝐧 𝐫𝐞𝐜𝐢𝐩𝐞. The objective was to make it a little bit easier, cheaper, and faster, and I think we can check all those boxes. With that said, although the instant pod allows us to cook recipes much quicker, I believe that when it comes to flan de coco, the low and slow over methods have a slight advantage!       … thank you for stopping by. After many tries, I have come to dislike the hard consistency that egg whites give the flan. Of course, this is a matter of personal taste, but I prefer a butter-smooth texture, much like a high-quality ice cream, rather than a hard consistence like jello.

    Just using 4 Whole Eggs ? 1 Can of Coco Lopez Coconut Cream

      .... just let the InstaPot do a natural release. In other words leave it alone until it releases the pressure on its own.

      … por seguro la leche evaporada es mucho mejor. Yo también he cambiado a evaporado y lo que hice fue añadí una cucharadita de extracto de coco para reforzar el gusto. Pero 100% opcional.
