  • Carasau Bread 🍞 More than bread. A symbol of Sardinian heritage, resilience, and culinary tradition. For centuries, its crisp layers whispered tales of gods, shepherds, and ancient civilizations.
    📝Ingredients:
    700g Semolina Flour
480ml Warm Water (adjust as needed)
    15g Active Dry Yeast
    12 tsp Salt
    Guttiau:
    Olive oil (for brushing)
    Salt
📜 The origins of Pane Carasau trace back thousands of years. It’s believed that this bread was first made by the ancient shepherds of Sardinia, due to its crispiness and low moisture content that allows it to be preserved for a long time, making it ideal for the shepherds spending long periods away from home while herding their sheep.
Some says that the thinness of the bread was purposefully designed so that it could be hidden underneath clothing during times of invasion and strife, and allowed people to hide their food supply from invaders.☸️
Another story claims that watching over the humble shepherds was the Goddess of Grain, who moved by the shepherds perseverance, decided to gift them with something that would stand the test of time, rigors of their journey and the marauding enemies. From the heavens, she bestowed upon them the recipe of this unique bread. 🌾
Some archaeological finds hint at these ancient roots, with ovens and tools from the Nuragic civilization suggesting that a version of this bread was consumed thousands of years ago 🗿
