My respect, sir. Can you, please, tell me for how long did you dry the fig leaves with the fig paste inside them and where did you dry them? Also, can you, please, explain to me how did the fig paste get so hard and thick, and changed the collor after drying? I would really appreciate your respond, thanks in advance.

Is this paste hard or soft?
I cooked gastris yesterday and it was a very good surprise but the consistency of the desert was a bit hard (I mean you can chew it but you would rather not if you have dental problems) this consideration makes me wonder about the dental state in ancient times and how they accommodated their recipes to it.
Do antic authors talk about it in their books of receipies ? Or did cooks accommodated their recipes to the capacity of the ones they cooked for?
About the figs, it depends on how much you dry them. The consistency of gastris, instead, depends on the quantity of honey you use. If you use just a bit, as we did, the gastris turns out quite soft.
In any case, Romans were obsessed with hygiene. They spent a lot of time cleaning themselves, included their teeth using tootpicks (the word dentifricium is Latin).
what kind of wheat did you use in the plebeian bread recipe? and what varieties of wheat the ancient romans used ?
Can you please let me know about the ratio of figs and spices?
We used about 2 kg of figs, 50 grams of sesame, and 3-4 grams of each spice, but we suggest following your taste about the amount of spices
