I've always said, if you want one thing to taste that screams Thailand it is Meang Kum. I've made it several times here at home and everyone who eats it is blown away!
I haven't eaten a duck for at least a decade since i moved to Europe, i barely can remember how one tasted but i know that it tasted better than chicken for some reason and it was quite expensive in Thailand.
Nakonpatom is place for duck and pig raise plant area for decades and there are Chinese-Thai farmer working for agriculture and livestock, thats why you can get good stuffs for roasted duck or Moo dang (Chachue) and Moo krob in this area.
Don Wai is pretty close to areas where laying and broiler ducks are raised in large flocks. If you walk away from the market a bit, you will probably see large flocks of ducks in the rice fields.

Around 17 mins the food sellers still cook and sell Hoi Jor in New Road or China Town, Bangkok. They use bean sheets wrapper for this recipes. Thank you.
Love Chai travel as well....we wish you will explore more the South Thailand, specially the Andaman cost until Myanmar.It's underrated on my opinion, with stunning beaches, less touristic islands, old towns with Chinese and EU influences, national parks.

Our guide took us to a palm sugar plantation - interesting process, but wife was a bit freaked out by all of the bees attracted to the sugar. Also, we remember the chedi -- massive! There was a market at the base of the chedi and we got our first exposure to the sights and smells of durian.

Did you's mean to colour co-ordinate outfits - matching Tees. I liked the duck better from outside stall/market to one I tried in a mall (think it was chinese barbeque place) but just don't like thick skin unless it was neck, I'm not sure - was in a thai green curry n tried but no way cld swallow = tissue before something else happened
Gary, you eat and you can know ingredient of the food, right? I think you have this skill, maybe from you eat Thai foods a lot and you can know what is it ingredient. I used to have this skill before.
