    200 grams sorghum flour
    200 grams millet flour
    300 grams potato starch
    300 grams sweet rice flour

    Thank you. My gluten intolerance was just discovered and I have cooked from scratch my entire life (50+ years). So, when I want to cook, I don't like having to use a pre-made mix. Now, not only can I make my own mix, I can vary it. It's great that you didn't just show how, but explained the percentages. You are a good instructor.

    Just found out, my gluten free daughter is allergic to rice flour so the all purpose flour we have been using will not work. I had been experimenting with mixing flours, had millet and potato starch on hand to make waffles. Thankyou so much for sharing.

    You are beyond adorable. I could watch you get flour all over you all day. Thank you for such an informative and entertaining video. One question I have however. Can I replace the sweet white rice flour with tapioca flour? Because I hate the gritty ricey taste of rice flour and I love the white bread taste of tapioca flour.

    Love your energy and your process and for explaining things so simply and mathematically. How would you adjust for the addition of nut flours like almond or something moisture-wicking like coconut?

    The *Delicious Desserts Perfecta Solution* book was more than I had hoped for. I would recommend it to everyone that is not only gluten free but also a vegetarian. The book is amazing you can google it. It should be in all kitchens.

    Keep spearmint tea near your flour and the bugs won't touch it. They hate spearmint. Did this last year after having a problem...and never saw one.

    Very helpful! What can I substitute for sweet rice flour? Perhaps some brown rice flour and some arrowroot and tapioca fours? Will the flour not come out too starchy? I know brown rice flour is more of a wholegrain flour, but I wondered if it would work in a pinch as I want to stick to wholegrain flours as opposed to refined grain flours.

    Actually, not all baked goods need binders, which is why we don't add it to the mix.

    Thanks for describing flavours and textures. Thinking of going gf (not celiac), and I find it all so confusing as to what grains and starches to use for what baked good. I love baking cookies and even bread sometimes. So u don't need Xanthan or Guar gums?

    That's awesome Shauna, thanks for explaining the wholegrain and starch ratio so clearly! So brown rice flour would be a whole grain flour while white rice flour would be classed as a starch, right? Is the oat flour whole grain flour?

      White rice flour would still not be a starch even with the skin of the grain removed. The starch content of normal white rice is not high enough to be classified as starch opposed to sweet rice flour.
      Oat flour would be whole grain though.

    GF Girl, thank you. This looks like a great all-purpose flour for baking the stuff we love (like biscuits or pie crust). What about nutrition? How about a healthy whole-grain mix that includes more of the nutrients we lose when we don't eat wheat?

    I was curious to know if you need to refirgerate these types of flours similar to wheat flour? As you know, wheat flour can sprout bug if left in a warm pantry.

    So I subbed in some Amaranth flour........I think I used too much! It tasted kinda like seaweed/kelp....I could REALLY taste it when I made pancakes.......Not so much with hot chocolate chip cookies.......BUT we could taste it with the pizza dough:( I like the high protein content, but not the fishy/kelp taste...
