I wonder how much the mark up is on white truffles in restaurants. Like if they are paying $2500 per Kg how much do they charge the customers at restaurants on this same Kg of white truffles on average?
immense. they also pay 4.500 Euros per KG (at the time of the video, likely more today), not dollars, and a gramm will sell for about 25-30 Euros to the customer in the restaurant. so low-balled the mark up will be around 20.500 Euros. Yes, you read that correctly. However, you are not selling a KG to the customer. And you have immense running costs in these restaurants, so the actual profit from the mark up is way less ofc.
yeah, and no chef in the world would ever buy from you again. they dont touch them, but you have to get close to get the full scent. if you don't let them do that, you have no place in this business.

Winston Churchil, Merylin Monroe and other were reciving the Alba truffles so they became famous. Then the demand grew higher and Italians couldnt find enough of them. So they went across the border to Istria, a region of Croatia because its the same climate. The Istrians were finding something as they were harvesting potatoes and they fed pigs with it. They called it a smelly potatoe. First they were exchanging them for some Italian goods, later sold, but very cheap. It was until 1999 and the found of 1,3 kg white truffle by Istrian Giancarlo Zigante, the world record at that time, that the Istrian truffle get worlds recognition and is now also branded as high quality Tuber Magnatum Pico. Now are Istrians buying from other regions and east European countries and selling under their brad, like Italians did in the past. So thats a bit of history so you dont get scammed :) The very best white truffles do come from Alba or better to say Piedemont region where this town is located, but there are a handful regions more here in east Europe where the same quality truffles grow.

That's just common sense. Unless you like to leave holes all over the place and when you come back some time later, you fall in those holes and hurt yourself. We do it with digging wild yams and other root crops. Always burying the holes.
