"How ya"ll are? I'm glad for you to see me, I gau-ron-tee!" Always loved watching Justin Wilson while I was growing up. He passed away in 2001 at age 87.
Justin Wilson is still alive and well on RUclips. I just went and watched an old episode As entertaining as it was years ago but now I’m old enough to cook some of his recipes
I watched Justin Wilson on public broadcasting as a teen. I remember that he poured some salt into his hand, said it was about a tsp, then he poured the salt from his hand into a teaspoon, perfect measurement. Ooh boy!
So my daughter and I have watched practically every single video you’ve ever made on your channel. We love everything about what you do. Could you possibly do a dish that stuck with me the two years I lived in Italy? It’s called “Penne al Salmone”. I’ve never been able to recreate this on my own and would love to. Thanks in advance Sam! Stay great!
Looks delicious! This is one of my family's favorite meals! I always serve it with a simple green salad and a fresh loaf of french bread and everyone's happy.
Cajun Tip: For "cajun" pasta we use fettuccini and sub the sausage and shrimp (although spectacular choices) for 1 lb crawfish tails. Add a few tablespoons of lemon juice and then you'd be certified 'Nawlins ya heard me! Thanks, New Orleans Native who loves the show!
I’m making this right now but substituted the pasta with linguine. I tasted it without putting the pasta in yet and omg!!! This is one that I’ll be making often just like many others that I do from this channel. Thank you guys!
I loved Justin! His recipes always seemed accessible. I make something similar. I always keep a container of Emeril’s Essence mixed up in my spice cupboard. I think my son and I have made at least 4-5 batches in the last couple of years (quite a bit for Minnesotans). I also keep at least one package of andouille sausage in the freezer for when the mood strikes. I need to make this soon. One of my go-to one-skillet dinners is a Cajun Rice dinner. I cook up peppers and onions with sliced andouille, then add some garlic and a cup of rice to toast up with a tablespoon of EE seasoning. Last, I put in a can of San Marzano tomatoes, squishing them by hand, and a couple cups of chicken stock. I use some of the stock to get all of the tomato bits out of the can. Bring to a boil, then simmer 20 minutes. I let it sit a few minutes with heat off, then serve. It’s so yummy and easy, and can be doctored with whatever protein you like.
I have to confess, I watch your channel almost daily to get cooking inspiration & you just uploaded essentially what I want to make. I was thinking Shrimp Scampi but DAMN if this isn't on a whole new level. When I make this it will turn out amazing! You hit every single one of my favorite ingredients....how do you think black beans would be in this? PS: I'd love to get a knife or your cookbooks!
My wife and I made this Saturday night. Dam if it wasn't a winner! Thank you much Sam for all the tips, good recipes and some good humor to boot! Much appreciated.
Well, I finally made a recipe. Usually I just watch the videos and dream about what the food might taste like but my husband was adamant about this one lol. It was delicious!
This has become a family favorite! We make it at least once a month. The only adjustment I've made is I add a dash of nutmeg to the sauce to amplify the cheese flavor, and I def use the chipotle paste rather than the tomato, just like he did in the video. I highly recommend this one.
Made this last night. Easy to find ingredients and simple to throw together. Seriously full of flavor. Thanks for sharing. Another nice feature is one can skip the pasta and serve it over rice (for the gluten intolerant).
Yay, you quoted Justin…I used to love him. Justin’s used to say, “ ohh wee o Garonne tee’. And he would always cook with wine and say, in his Cajun accent, “one cup o’ wine, 2 cups o’ wine…opp too much wine’ , then drink the wine. He was amazing!
I really love these videos. Just kind of following along to get it just right. This one was particularly delicious! One suggestion would be to either list or mention the quantities of each ingredient being used. There were a few, but is it the whole pepper, the whole box of pasta, etc?
This recipe is really flexible. You can add more or less of something as you like and it will be fine. I just kinda winged it on the quantities. I did two whole peppers and a whole onion, plus the whole pack of sausages. Ended up needing to do more like 1 and a half cups of cream to make the sauce work with all that. It turned out to be a pretty big batch, about 1.5-2 times what Sam made. But that's fine as it will make good leftovers. Can't say about the pasta since I decided to serve it over rice. I definitely didn't make enough rice to match. About 1 cup rice (what I made) would probably match Sam's. I'll need to make another pot for the leftovers. For pasta serving I would suggest keeping the pasta separate and just serve the meet/sauce over it,. That way you don't need to guess the proportions and everyone can just take as much as they like - if someone wants more noodles/rice they can have it.
I've made this about 4 times now and it's always amazing. Mix and match with the protein as well. I put chicken in with the shrimp and sausage last time, and it was great. Also try some poblanos along with the bell peppers. It's awesome. What makes it is the seasoning combo. It's a great taste. I have a bag of it and have used it on other dishes as well.
Very well done. I prefer yellow or white onions but other than that well done. They would charge at least $15 for a plate of that at a chain restaurant like Applebee's. Not as good and half the shrimp.
Justin was the bomb!! I loved him so. I have one of his cookbooks somewhere around here. A gem. His tv series was so good. The way he talked cracked me up. He would’ve used a lot more spice. I guar-an-tee!! He also would use a lot of fat in his dishes.
this cajun approves. that looks delicious. i might make a pasta with my leftover crawfish from my crawfish boil this weekend because this video has inspired me to.
Made this tonight. Very good. The wife doesn’t like shrimp but my daughter and I do. But liked it it anyways. And you mention Justin Wilson. Back in the late 80s we would come home from school to watch him. 1st cooking show I watched.
Hi Sam, I'd like to thank you for making your videos beginner friendly! My husband has forbidden me from using anyone else's videos bc yours are the ones that always hit the spot 😅

OOOHHHHhhhh, yep. Forgot the splash of lemon juice.... solid!!
A year later. When do you add the lemons? Thinking of making this with the lemon 'nawlins way you mentioned tonight
Made this last night and it was absolutely gorgeous!! Definitely one I'm going to do again in summer sitting outside x
I’m making this right now but substituted the pasta with linguine. I tasted it without putting the pasta in yet and omg!!! This is one that I’ll be making often just like many others that I do from this channel. Thank you guys!

This looks freaking amazing and couldn't be any easier to make! Excellent job guys! 👏🏼 👊🏼❤️
Breakfast Smash Burger please. Croissant bun, eggs, bacon and some kind of breakfast sauce.

I’ve made this dish several times and it’s simply delicious! Thanks for such a great recipe!!!
Oh one more thing, I think you deserve to have a guest spot on the show Bob's Burgers your sense of humor would be amazing on there!

Same here! Loved watching the Cajun Cook Justin Wilson when I was a kid! GOAT!
Justin Wilson was awesome! Between him and my grandma, led me to a life long love of cooking!

Definitely will be using this recipe. I have a huge family and we always get together in the summer. This will be a crowd pleasure for sure.
My former roommate is a cajun chef and used to make this all the time and it was always great!

That looks FANTASTIC!! Pinkies up! (hand on counter...)
Omg I remember watching the Cajun guy cooking wearing his overalls 😂 his food always looked so good 😊 just like everything you make ❤
Great recipe, using a premade pesto instead of cajun seasoning also works really well with this type of dish.
Love the random scar/scrape on the face reference!
Just made this for dinner , and my husband loved it ! Thank you Sam 👏🏾😁😎 great recipe
Made this tonight for dinner. OMG, soooo good. Even my son, who never eats leftovers, claimed them for his for tomorrow. Thanks!!
Justin Wilson on PBS was a huge part of my childhood. I have one of his cookbooks I hit up often.
Wow what a great and easy cook! Good work
Made it tonight for dinner while traveling, my crew said I need to make this every week. Thanks for the recipe, Sam.
That looks amazing. Good recipe Sam. I really like the change in recipes you've been doing lately.
It's Wonderful...I GARONTEE!!
Looks good. I’m thinking would also be interesting over rice instead of mixing in pasta.

Making this this weekend.
Omg, Sam. Cajun is my favorite combination
Love the cajun pasta!!!
Smashed Mushroom Swiss Burger!
Very well done. I prefer yellow or white onions but other than that well done.
They would charge at least $15 for a plate of that at a chain restaurant like Applebee's. Not as good and half the shrimp.
Sam, my favorite saying from Justin Wilson is "let me tell you what I'm gonna did" too funny!!
Wifey loves it. I made it with chicken instead of shrimp tonight for the kiddos and everyone was crushing their plates lol
Justin was the bomb!! I loved him so. I have one of his cookbooks somewhere around here. A gem. His tv series was so good. The way he talked cracked me up. He would’ve used a lot more spice. I guar-an-tee!! He also would use a lot of fat in his dishes.

Yo Sam and friends! Make Currywurst smash burgers! Add some sauerkraut salsa and you're golden! 🎉🎉 All the best from the Netherlands, GJ
I bet a little white wine in the sauce would be nice.😊
Made this for dinner tonight, family loved it!
I wanna see a Pimento Cheese smash burger. Had one at a restaurant once and it was insane
A homemade pimento cheese, please. I'm in the northeast and pimento cheese is impossible to find. Thanks.
Before adding cream:
Deglaze with white wine,
Add garlic cloves.
Top finished product with chopped green onions.
