- As time goes on, I'm learning that basic advice like "follow the instructions on the bag" can actually be helpful. But if you follow the rice manufacturer's recipe and something's always wrong, there's also some troubleshooting advice in here. Start cooking perfect rice today (or mess up once today and master rice tomorrow).

Buy a rice cooker
The most insane part about this is that the existence of a rice cooker never even crossed my mind, in the hours and hours of planning, writing, shooting, and editing this. Damn. I really need to re-examine my tiny countertops and unwillingness to buy things.
seconded. one time I was in college and forgot the pot for my rice cooker and called my mom who talked me through cooking it on the stove. unfortunately, I burned it. Rice cookers are a good investment especially since we eat rice with everything and then you can cook/do other things while you wait
Uhhh Yea as a Cajun I agree (we grow it here too and it’s a constant in nearly every local recipe) rice cookers are necessary

TIL there are ppl who *don't* rinse rice before cooking, how uncivilized.
you'll actually get somewhat better results if you soak the rice in cold/ice water in the fridge for like an hour or so after thoroughly rinsing it. rinsing is like 90% of the way to perfect rice, and the cold soak is the last 10%.

Yes, it really is that easy^^^ A tip I might suggest if you don’t want just plain white rice but also nothing too complicated is using chicken broth (or any other kind) instead of water to give the rice a little extra flavor. Also, adding spices like turmeric, cumin, and bay leaf can give the rice a little “extra sumn” and some color as well 👌🏼

I love adding butter and salt to my rice. Thank me later. I also only rinse the rice once, the starch gives it some extra flavor. A chef also told me about the "finger" technique with rice. Pour desired amount of rice into pot, put your finger (index) on top of the rice and where the first line of your finger starts (I call them joint creases lol) pour water to that line. Works every time.
Edit: I only use my rice cooker for white rice, but if I wanna get fancy and make stir fried rice or Spanish rice (if you're Mexican this is usually a daily thing we eat) I use a pot for rice for these things

For the towel underneath the lid you could wrap it around the lid in order to stabilize the towel and minimize the chances of your house burning down. I usually do that and I feel that rice from a pot tastes different then from a rice cooker personally. Great video!

Last week I cooked his potato recipe that had us boiling first, and then roasting them... Holy mother of all that is good in this world it was GLORIOUS! The texture is truly amazeballs. And my boyfriend had no idea that they had been cooked uniquely when I served them, so it meant a lot when he told me randomly while munching them that their texture was brilliant and unique - soft/creamy/fluffy on the inside, and crispy on the outside - a very melt in your mouth type of texture, unlike how they are normally are inside when only roasted and not pre-boiled (dry). I roasted them with a bunch of butter, olive oil, rosemary, tarragon, thyme, and minced garlic.
Unfortunately I got sick as I was cooking that night, so I ended up not being able to eat them freshly cooked with him. I put them in my toaster oven a few days later to reheat and they were, like I said, still amazeballs. Tasted as if I JUST had cooked them. So they make great leftovers too! Like the cook here says in the potato video, make a good sized batch in the oven because you’ll be wishing you made more than if you just made a small batch in the frying pan. It does take some babysitting over the oven, but since you make a good size batch, the effort more than pays off. :)

I tried the potatoes with smoked paprika, chili powder, onion powder, garlic powder, salt and pepper after tossing them in some neutral oil. They were awesome. Crispy on the outside, soft in the middle :D

In my experience and reading, follow the amounts on the package for your rice, but don't assume that they're a ratio that can be doubled.
Best I can tell, the amount of water you need for an amount of rice is a fixed ratio of rice to water (around 1:1 depending on the type. short-grain seems to need less), *Plus* more on top. The "more on top" part is the excess that will boil away to steam and keep the pot from boiling dry too early. I *think* this amount isn't a volume ratio, but needs to be a certain volume per square inch of surface area that's boiling/evaporating. This is why in cultures that make sticky rice they often don't measure the water precisely; they just measure the depth of water over the top of the rice, a bit under an inch, or up to your first knuckle if you place your index finger on the surface of the rice. You're on your own for extra-long-grain rice that needs to be parboiled and steamed like basmati.

Your validation/reproduction of the starch rinsing idea is appreciated, Shaquille. I have been doing that myself for years, after seeing it in another video on RUclips, and have got good results. I think getting consistently good rice is difficult for a lot of people, and that that step is very important...so we need to make sure that everyone knows about it.

Really really helpful video. I actually learned this technique from my college roommate. For some reason, purchasing a new rice cooker just didn’t make sense. We had small non stick pots and we were going to put them to use!
0:19 that's musenmai. Says so on the little icon in the upper left of the bag. It goes through a special milling process so you don't have to rinse it, which is why it costs a little extra.
I have a Zojirushi rice cooker, and have never rinsed musenmai. Comes out perfectly every time.

Honestly, it's not exactly correct. For left over rice, while it is still WARM, scoop a serving size from the pot and place in the middle of a square piece of plastic wrap, then fold the wrap tightly around it, sealing it, making like a football shape. Repeat, making single serving sizes. Let cool, THEN freeze. Days later, take one out of freezer and microwave about a minute or so (depending on power) and you have fresh tasting moist rice. If you let it cool before wrapping, it dries out too much.

@@joiboya If you want, you are welcome to come to my house and make rice on the stovetop a few times a week. Otherwise, microwave rice is more convenient. Try it. If you do it right there is no real difference in taste/texture. Microwaves do steam really well.
"Strain the water from the rice. Add the rice to a sheet pan in an even layer. Bake for 5 minutes at 350" Yeah... no. We're just gonna eat some soggy rice at that point. Or better yet, just leave the lid off the pot and let the excess water evaporate.

The thing that really upped my rice game was tomato paste. Just a little love and a cheap can turns boring rice into a staple that's versatile enough to use with a stuffed pepper or tostada the next day.

An alternative to a rice cooker, as mentioned by most comments, is a donabe. Which doubles as a rice cooker and a general amazing cooking tool. You can make some really delicious rice bowl dishes with it. I'd also recommend getting high quality rice. Imo it makes a huge difference. My go to is tamaki gold.
