Building a Beer Keg Pizza Oven

- With this DIY pizza oven I can cook a Neapolitan style pizza in minutes. This oven gets hot!
I wanted to see if I could make my own home pizza oven similar to the Roccbox or Unni pizza ovens.
After a few iterations I got something that I think works awesome and can cook a pizza in one to two minutes depending on how hot I want to run the oven.
So this project took me a long time to finish, I worked on it, on and off for the last two years. Looking back and editing this video I think the video makes sense.

This is the DIY ooni oven I was looking for. The ooni oven has the insulation outside the steel so heat rises really fast. I will try building this design following ooni oven insulation method though. A big thank from Greece!

Nice build. try a wetter dough, typically needed for high temp bakes to get that puffy rise. That should really rock your pizza with that awesome oven!

This is really cool. Maybe use the propane burners for the floor and the rocket stove burning wood for flavor, any way this is very inspirational.
I would actually keep it how it is with the propane. But, get a nice stainless steel wood smoker tube and put apple wood chips in it. Then, put it into the ripping propane flame! They already make those for regular BBQs. Then you would have ultimate flavour with the speed of propane or NG!
I wonder about how the air fuel mixture is working? Interesting design. You’ve come up with clever solutions. Interesting.

I like the idea that you introduced propane to pre-heat. I have built a brick pizza oven, and use only fire wood, it takes a very long time to get oven to baking temperature.
At 18:40 Is the shooting flames from propane or wood from the rocket stove???

Don't let the pizza oven BIT YA. 🤣 Most of us already have the best pizza oven there is just setting on the patio. ITS CALL A KETTLE GRILL, i was looking on my patio. There set a smoker, 2 dome grills, one was even gas. ALL I DID WAS GET SOME PIZZA PANS AND A PEEL. It make some of the world best pizza it perfectly cooks up to 18" pizza . It season the pizza pans and they will last for ever. I LOVE IT. Its save me time and money

Andrew, I am curious about the burner. I am thinking of building a pipe burner like this using stainless steel pipe that would go through the mouth of my dome oven (diameter width of my oven is 960mm). I want to use natural gas (I assume it is low pressure). I am thinking of a long 800mm s/s pipe (no joins inside the oven) with one or two jet burners. Do you think the pipe can sit within an oven at 400 degrees celsius? Obviosuly the ball valve will be outside the oven with no exposure to heat. Do you think it will work.
I don't want to core drill a hole in my oven floor ...

I’m making one right now, I noticed you said it would be okay to do without cement. My test run without it is cooling down and there is a ton of cool down flex and it’s whining. I would say the cement is beneficial.

Nice Pizza...if I transfer this, can I use a old Bbq get myself new burners and a pizza stone as cooking surface...then use your technology and put some insulation into the Bbq cover..so I can copy a simple pizza oven with not having your great welding skills and no welder? My hint to each hobby pizza maker is make your dough 2 - 3 days in advance and keep it in the fridge..take it out roll it and rockn rolll...👍
could you build a combo oven? use propane to heat preheat and the wood heat to maintain. And yes, fire bricks do a much better job on the crust.
Awesome build, thanks for sharing! I'm in the middle of doing something similar, but was planing to use a cordierite base after reading that a steel plate would transfer heat too fast and would char the bottom of the pizza, but it doesn't seem to be the case at all in your oven. One question, after some use, did the plate warped in some way? Thank you!

What is used for the pizza oven base bottom where you put the pizza?
Is the refractory cement to keep heat in?
Or is it to stop the metal heating up too much?
Great Video! I'm currently converting my 4' x 3' fire pit into a pizza oven by putting a removable copper dome on top of it. Have you had any issues with the refractory cement coming off and how thick of a layer was that? I'm worried about it being too heavy and it sticking to the copper so I want to do a real thin layer with steel mesh holding it all together.

Hi just curious how long of a burn do you get from a 20 lbs propane tank?
Definitely work on the rocket upgrade. You're gonna have a much more even heat and that wood smoke that just can't be gotten with a gas fire! Great build and mods but don't forget old school and some practical patience. This oven on a wood fire can do soooo much more. How about a LPG pre heat then a wood fire to cook and maintain?

This is one of the few builds that properly cooks the top of the pie. In so many cases the top is raw and the bottom is crucified. Well done, pardon the pun...
So im confused why burners on the bottom and the back. Is that for it to heat up faster?
would it be wrong not to cement the inside of the keg?
Probably could do pottery in that thing since the temp gets up so high.
I was thinking... what if you put a grate over the rocket's opening in the oven's floor... then put a chunk of pecan or hickory or oak right on it? Wouldn't that give you a more "wood-fired" taste? I think if you put it in the rocket's intake it would just burn up clean without any taste entering the pizza...
I need your help please, i have a wood fired pizza oven i want to add a propane burner to . I used 3/4' pipe and shaped it around most of the oven for better heat distribution and added only one air mixer. i cant seem to get the flames to turn blue and oven wont heat up . if you have email or way to send you more info let me know please
I wonder if it would be help to force air into the wood rocket burner using a jumping castle blower or something like that.
A £5 hair dryer works a treat on BBQ's.
Did you put the fire bricks back in after the redesign. It didn’t look like you did. On regular pizza ovens isn’t the bricks themselves heated instead of having flames above them. Just thought you maybe could heat them from underneath instead of having a flame shooting up above the cooking top. I’ve made grills out of those same kegs and they last forever! Good video 👍👍
No you can't just heat the bricks. All that would happen is you would burn the base way before the topping melted. You have to have the heat coming from above. In fact the Roccbox this was inspired by has no floor heating (it's not required) The refractory base heats up nicely anyway. Same goes with any full sized commercial wood fired pizza oven.

I have a feeling smaller pizzas might work best with that oven you built. Try Pizzas about 8 inches round. If I'm correct about the size of the pizza then it means that oven would be better served if you made it three times larger to fit a normal size pizza. I think the pizzas are too close to the heat source and is why you are getting burns. A larger oven or a smaller pizza would have a more correct distance from the heat source to get a more even cook. Nice work. Don't stop at pizzas try making a steak in that thing. I bet a steak would come out a lot better. Just use a cast iron skillet.

Nice video! Add some perlite or vermiculite in your refractory cement for isolation and it makes the dome lighter in weight. Bake your pizza direct on firebricks or refractory tiles for the real Italian taste, not on metal.

Ajita White you couldn’t add enough wood or charcoal under that size of wood too worry about that. And who worries about expanding? Expanding doesn’t =failure and expanding doesn’t =explosion. So what’s the issue? Metal is malleable
i have a genuine question .. is there any reason for alarm because u didnt use fire bricks.. overall i love the project
A regular brick might contain impurities that, in proper conditions, might cause them to explode at high temperatures (think as a small scale, but enough to be potential hazardous or at least ruin a pizza); the oven temperature might exceed the bricks own curing temperature. That's a lot of "might". Cover them with a sheet of steel and you are safe.
Fair play that worked
Dont put metal on top of the stones.. the stones absorb moisture from the pizza whilst cooking and make a nice chispy pizza base..

Install a pizza stone and elevate it by an inch or so, that will circulate more heat underneath for a better baked bottom.
