actually if you put the boiled vegies through a blender or a food processor, you will be able to extract even more flavor and stock... and the cool thing too is that the blended veggies that have been filtered through a sieve will be able to be digested in the compost faster... Just an ide for anyone who wants to maximize their stock when not making giant pots worth of stuff like in this video!
Glad I found you! I’ve been doing this for a while now. I take it one step further and strain it through a flour sack cloth, to remove the sediment as I like my stock clear. Then, I remove the sediment from the cloth and dehydrate it. 😊 great video!!! It’s raining here today and I’ll be binge watching your videos😍

You are living my hoop house/ all american pressure canner/ freeze dryer dreams! LOL It is all good I make good use of my presto pressure canner. I am in the process of cleaning out old stock of pre plant based canning.... on a dime while living in a apartment building. It is 100% possible when you set your mind to it.

Thanks for sharing. You’ve inspired me. I usually don’t buy broths because they are stupid expensive. I figure if I’m making a soup, I’m already putting onion, garlic, celery, salt, and seasonings in so water will do just fine instead of broth. But now I’m going to try going SOS-free so a little extra flavor from some homemade veggie broth might be helpful plus I like the idea of making use of veggies scraps and produce that has passed it’s prime. I’m guessing it would add some nutrients to my soups as well. Don’t have a pressure canner yet, but next month I’ll try freezing my scraps and making a broth.

I got a new Tribest Vacuum blender and a canning attachment from Bed Bath and beyond and I can pull a vacuum on my jars without doing the whole canning thing. You can even get a vacuum blending attachment for your vitamix. Go to Discount Juicers and he has them for sale there.
Great video. I would have to thaw that produce a little to save the ZIPLOC bags for next time. Just rinse the bags and put away for another use :)) But I will be doing this from now on. I can’t composte hère in the winter so this would be a great alternative. Thank you!!! You’re funny too. 😂

Yes you can freeze it in jars, just leave space for it to expand in the jars. Or you reduce it down, if not all the way to a thick paste, then just down to a thick liquid that you can dilute when you use it. It should keep in your fridge for a couple weeks easy. I follow your recipe. But I only use the lowest heat setting overnight with a lid to preserve the fragile vitamins. I get the same rich stock with less trauma to nutrients.

Catering College did not teach this stuff because of possible food contamination in soil.Does the cooking on the stove deal with possible contamination IF THIS WAS MISSED TO ANY DEGREE?? I AM Terrified of the thought of getting this type of foodborne illness through missing something. Sorry for asking such a basic question!! Canning is not a thing in Scottish food storage. Iv just purchased an all American pressure canner online. Your advice would be much appreciated. This may help others as well. I am concerned about Botulism ??? Pressure canning was designed to eliminate any potential for botulism contamination. Search the web for more on pressure canning, but ya you are safe. Otherwise it would not be a thing.

I pull a container out of the freezer when I run out of what's in the fridge. When I get to my last container, it's time to whip up more broth. Do you wash you produce/veggies b4 peeling them, (so you are freezing the scraps clean) or you just leave everything the way they are and cook them unwashed?
I get really crazy about bugs in my veggies and greens....it takes sooooo much time to go through all the greens and veggies which is why I go through phases with juicing. You don't think about it? I am not asking to be persnickity, I get too crazy about it. I enjoy brussel sprouts but I often see little black bugs in them so I avoid them. I get so grossed out when I see alot of little bugs :( Tell me something encouraging! LOL
I made the banana bread and it turned out great. I added blueberries, which was a great addition. I also used more cinnamon. I sweetened it a tiny bit using about a quarter teaspoon of erythritol, which is supposed to be an anti-oxidant sweetener and safe to use.
For kitchen scrapes--do you use the parts of the veggies that you would never eat? like when you take the stem off a bell pepper--you have some bell pepper flesh left around the stem but its mostly woody stem. The ends of the onion you cut off usually have a bunch of onion peel on them--is that ok to use? thanks

Since then I would recommend leaving out onion peels, and I would probably leave out potato peels too it sounds like. I havent noticed much bitterness myself, but I have not been to discerning, paying little attention and always enjoying the food. I am easy...thanks for watching!!
I made my first batch this evening...haven't tried it yet but I had onion and potato skins, broccoli and cabbage in it along with everything else. I'm breaking all the rules....haha. I was thinking a little soil might be good for you. I’ve recently started taking fulvic/humic acid as a supplement. It’s helped me out and this is one of the nutrients that pack our growing veggies and plants with nutrients and other beneficial things. So when I saw you throw them into the pot I didn’t think too badly of it. You look like you know what your doing. The best veg broth video I’ve seen.

Q: Once your done canning in the pressure cooker do you refrigerate the stock or is it safe to keep in the pantry? I know prob sounds stupid but I'm assuming the fridge?? How long is it good for?
If you can it in a pressure canner (not always the same as a pressure cooker) it will keep in the pantry for a year or more. That is the main reason for doing the canning, to make it non-perishable. You don't wash anything? Even from a hydroponics garden, tops get dirty from the air, from birds, insects, etc. Also, I'd appreciate your comment on the length of time you simmer your veggies. I've read in many places, that simmering for more than an hour makes the greens/veggies release chemicals that make the broth bitter. True? False?
That could very well be about the simmering. I use a huge 20 quart pot so it takes quite a long time just to slowly get it up to a proper simmer. I dont think there is any NEED to simmer it longer than an hour; it's just that sometimes I do not have time to mess with it for a few hours, so I just tend to it when I can. I am not sure about the bitter thing. I have since started taking out the onion peels from the mix for the same reason, bitterness. As far as rinsing, I do rinse everything. I may just not have shown that in the video, I cannot remember. But ya I rinse just to get the dust off if nothing else.
@@momochago2136 I sometimes wonder that too because I do make stock out of my scraps, but I end up putting a coffee filter inside my wire sieve so I feel that between the boiling process and the tiny holes from the filter, it filters out the dirt and/or kills the bacteria where it doesn't matter
Good video, but Please don’t destroy the plastic bags. Think about our planet 🌎 plastic bags can be washed, dried and reused. Better yet use freezer paper. 👩🌾

That depends on whether it has a slow cook setting. In terms of time and energy consumption an instant pot is better.

Yes all of that is the best stuff to make stock out of. The carrot ends, the bell pepper guts, the onion peels, everything.
If one peels the outside of the carrots, for example because it is kind of dirty is that Ok to use?

You don't wash anything? Even from a hydroponics garden, tops get dirty from the air, from birds, insects, etc. Also, I'd appreciate your comment on the length of time you simmer your veggies. I've read in many places, that simmering for more than an hour makes the greens/veggies release chemicals that make the broth bitter. True? False?
That could very well be about the simmering. I use a huge 20 quart pot so it takes quite a long time just to slowly get it up to a proper simmer. I dont think there is any NEED to simmer it longer than an hour; it's just that sometimes I do not have time to mess with it for a few hours, so I just tend to it when I can. I am not sure about the bitter thing. I have since started taking out the onion peels from the mix for the same reason, bitterness.
As far as rinsing, I do rinse everything. I may just not have shown that in the video, I cannot remember. But ya I rinse just to get the dust off if nothing else.
I find this also scary weird . All the scraps boiled? I mean all the dirt stays in the water that you will have later.
@@momochago2136 I sometimes wonder that too because I do make stock out of my scraps, but I end up putting a coffee filter inside my wire sieve so I feel that between the boiling process and the tiny holes from the filter, it filters out the dirt and/or kills the bacteria where it doesn't matter
Good video, but Please don’t destroy the plastic bags. Think about our planet 🌎 plastic bags can be washed, dried and reused. Better yet use freezer paper. 👩🌾

I am glad you called me out on it. The ones with a lot of wet stuff that has frozen into ice I do have to break apart sometimes, but I promise I do try to reuse, especially when I get called out on it ha ha 😜 I appreciate your support!

I love the idea!! But why are you doing it in such an "aggressive" way? And why destroying all the plastic bags- they can be cleaned and reused...the way you cut your veggies looks like you are killing them...LOL...with a smile on your face would have made the video a bit more "friendly"...(no offense- but a smile suits you much better)- nevertheless I like the infos you give
I don't think you are 100% vegan because you have got to be eating some bugs by not washing your vegetables.
