Top tip, renew your passport lol. Certainly in the UK, declare your passport lost, or damaged, there are processes to get a replacement, and it isn't complicated, and doesn't cost much to do. Bingo, clean passport. Won't erase any immigration records, but, that is if they decide to go that deep.

So, if one future day if a soon not-planned overstay happens to me I will rush to the checkout scene (=airport) with my bags and I fly out quickly ;-) ... because I don't want my passport be colorized.
If "an overstay happens to you", you are already too late, and will get a red stamp. However, I think you meant "if an overstay is about to happen to you", as in prior to it actually happening, you will rush to the Airport

I was told today I can only stay as a tourist, 180 days per year....who else has been told this?
Is that per calendar year or a rolling 12 months? or based on some anniversary when you first ever arrived in the country (like Brazil told me)?

Yeah. We had the Red Stamp in 2021 after we got locked down for a mandatory 10 days after testing positive for Covid. We were 5 days overstay and had to pay 6,000 baht at the airport.

Red stamps don't always mean you'll be an issue. I got a red stamp entering Thailand on my border run I did a week ago.
Red is normal for entry
It does not necessarily mean you will be an issue, but it does mean that you had an issue. So, what issue did you have entering Thailand, and how did you resolve it?
@newmankidman5763 never had any issues before. My visa ran out. I didn't renew it. So instead did 1st border run in many years.
