These look simple, delicious and very impressive ! I'm not a fan of salmon personally, but I might substitute for a piece of ham or prosciutto on top and some extra chives in the cream to replace the dill. Lovely, easy, elegant. Thanks Beth!

TheNara30 Aw thanks :) Actually Pate Feuillete is "Puff Pastry" and filo dough in French would be labeled "pate a filo" it has a lighter texture and feels almost like "cooked paper" as my girls would say :) hope that helps! :)
This question might sound stupid but how many of the thin sheets did you use for each 1 of the 2 layers I didn't see you separate them and the recipe only called for I box I'm not sure how you made that work. This looks like a great recipe and I would love to try it! I hope this made sense!
girlyathomefun0828 Oh sure and no questions are stupid here :) OK so I grabbed about 8 sheets of the fillo dough, and that was the stack that I cut in half, and then half again. So when you place 2 stacks (of 8 sheets) in each well, it totals 16 sheets all together in each well. That will give you the structure you need to create a free-standing cup. Hope that makes sense? :)
Beth you devided the filo dough for those large muffins tins what if I use the smaller ones I presume I will need to cut the sheet in thirds so I get smaller pieces ?

I want to like quiche because it's so classy and looks delicious. But there's always this distinctive smell between the egg mixture and the tart when I cook it. I don't think it's the tart or the mixture, I think I'm just not used to the combination. But maybe I'll like quiche using a fillo dough. Can you make more recipes using it? :)
Chiibiisuke Oh yes it can be. I find the lighter in color the salmon is, the less salty it is. So light pink, less salty than dark pink. You can also squeeze a little lemon juice on the salmon first before placing on top and you'll find the acid in the juice will balance the saltiness. Or leave the salmon off altogether and just use the sprig of dill on top of the cream. That would be great too :)
Made this today! The filling with salmon was really good and I used Tzatziki with dill instead of sour cream with zest. However, I did not really like the upper parts of the dough - they became really brown and were crumbling like crazy making a lot of mess. Other than that, it is a great recipe!
+A. Febrian A. Oh sure you could do that or ham would be great too maybe just dice these meats and put in the batter to bake inside since the sauce on top might not work as well without the salmon. Just top with the chives instead :)

I think puff pastry sheets would work well. Just make sure to dock the dough.(poking dough with fork)
