  • In this video, I'm going to show you how to make Greek lentil soup.
    Greek lentil soup - or "fakes" in Greek (pronounced fah-khes) - is a traditional Greek vegan soup served with red wine vinegar.
    It's simple to prepare and makes a perfect quick lunch. Serve it with some salty olives and make sure you have plenty of bread for a complete Greek meal.
    First, heat some olive oil in a large pot and add the onions, carrots and celery and saute them until they are softened.
    Next up add the garlic, followed by the water, tomatoes and bay leaves.
    Allow the Greek lentil soup to come to a boil - and be sure to skim off any impurities that rise to the surface.
    Cover and allow to cook on a simmer for 45 mins.
    Finally serve the fakes with a splash of vinegar, accompanied by some salty olives and plenty of bread.
