    that's right...I started small with a 3 pizza oven, tent and so on. By the time I started upgrading and the business is running well. Wish you the best luck 🙌

    Massimo sei un grande. Io vivo in Messico e devo dire che le.pizze qua fanno un po' sognare..... Ho iniziato in pandemia a farmi le pizze e a cambiare mille ricette di pizze, provare farine perché qua comprare farine italiane costano un botto, pero devo dire che alla famiglia piace abbastanza e non soffro più tanto. Quello che mi affascina è il tipo di massa che fai te, non riesco a trovare ricetta per farla venire fuori come la tua, anche perché qua ho una temperatura media di 35 gradi d'inverno e 43 45 in estate...... Quindi maturazioni rallentate in frigo etc...... Però complimenti mi piacciono veramente tantissimo i video tuoi e come incoraggi a tante persone a fare il suo proprio negozio, grazie continua a mandare video.

    Thank you for your insight! I recently moved to Florida from New York and I am amazed how bad the pizza is here. I am an amateur pizza maker. My family says I should open a business.

      Its the humidity the dough just isnt rises the same but yeah theres plenty of good places in fl u just eating dominos shit

      A lot of the bad pizza places in FL are owned and operated by amateur pizza makers from NY that think just because they're from NY that they make good pizza. Haha...have you opened your pizza shop yet?

      @@cheftuan I have actually found a few good pizza places in my area in the past several months. Some very good ones in fact. The area is spared of my pedestrian amateur pies!

    Great video. What if someone cancels an event how long does the dough last for? I suppose the vegetables, tomato purée all have to get chucked?

    Olá, Massimo. Eu vivo no Brasil e gostaria que você me mostrasse um pouco mais o seu forno, o seu antigo forno que era montado em cima de um reboque. Como ele era? Esse seu novo, como você o transporta? Ele é construído em cima de qual estrutura? Aqui não temos esse tipo de forno móvel e estou interessado em mandar fazer um. Se tiver o projeto eu agradeço.

    Pretty cheap really to have purchased everything for ~15k pounds. A portable gas fired oven here in the US from a big supplier on the east coast was quoted at ~$13k, just the oven...

    do you need to keep your ingredients on cold storage or the small aluminum containers are fridge like in the restaurants on the cold table?

    I'm seriously thinking of starting my own bussiness based on your model here in Croatia. I'm tired of working with other people who do not take their job seriously(drinking, drugs, lazy) or are allways in a bad mood blaming customers that they have to work. I love making pizzas and this would be a dream come true for me. How many hours a week do you work? The only thing i'm worried about is if I'm going to have enough time to spend with my son and wife. All the best.

      @@kozmickoprase aww thats an awesome idea. My husband is the one who came up with this pizza business idea but unfortunately he traveled to a country and was kidnapped. He was found but came back home with mental health. His dream was to have a pizza business. I am a graduate and have a decent job. but I would like to quite, learn this pizza business and do it myself so that my husband would be happy. Massimo thank you so much for your advice.

    Massimo hello! What percentage of water do you use in the dough? It is elastic and smooth! Do you use the refrigerator for work? The temperature outside is increasing, my dough is too soft in the afternoon, how do you deal with it? I add more salt and oil to increase the fermentation time.
