The part about being your own boss and having enough to live a nice life resonates massively with me. I'm planning to start a pizza food(trailer) next to my 32 hour desk job. And from there, who knows. A proper food truck would be too expensive at the moment. The pizza's I can get in my neighborhood are terrible, but I hope there is a market here for good pizza's. Meanwhile I keep practicing. My last pizza party was quite a success. I'm working from a small Ooni Fyra 12 at the moment. One mate actually said "this would be great on a food truck festival". And he didn't even know anything about my plans.

I found your videos very interesting because you are very honest and transparent with your history and numbers. I'm sure it hasn't been easy or quick, but now you have all the work and money you need to have a satisfactory way of life. Happy for you, and hope I can reach that too. Legend! That is a lot of money for only 1-3 days of selling pizzas per week! I know you gotta do all the prep/cleaning so it's a lot of work. But I'm envious of it. I see a lot of Pizza vans grinding so hard, open 5-6 days a week, have to do nights as pizza sells better for dinner where I am. Your pizzas fly out during a lunch only which is just insane! I love making pizza and I'd love to do this but I doubt I'd be able to ever work so little days to make close to what you do! Looking forward to the dough video!
If you go down to the Alsace bordered with Germanys Black Forest you will find something called “flammkuchen”. Basically a very light and thin crust with crème fraîche on top and usually onions and speck. I buy it whenever I see it. Might be a good addition to your specials.
Love this and your transparency. I love pizza and make my own generally with poolish or sourdough as my wife has a few gut issues. I’m a chartered civil and structural engineer in the UK and have a similar approach to my work life balance and run my own businesses. I work effin hard like you do and try to enjoy the benefits so hats off to you and if I am ever in that neck of the woods I will look you up. 👏🙌

Refreshingly open and honest, when you do work you clearly work hard and you appear to use top quality produce so all the best to you. A lot of people will look at those numbers but then not factor in the ingredients, tax, national insurance, pension, lack of sick and holiday pay etc but well done for prioritising family time too. About the only thing that i've seen to pull you up on is that you only cut a 12" pizza into 4!
