  • Ingredients:
    Mutton - 1½ kg
    Ginger - 2 big piece plus 1 big piece
    Green chillies - 3 plus 4
    Turmeric powder - ½ tbsp plus 1 tsp
    Pepper powder - 1 tbsp
    Curry leaves
    Garlic - 2 bulbs
    Onion - 2 big
    Coriander powder - 1½ tbsp
    Red chilly powder - 2 tbsp
    Tomato - 3 big
    Coriander leaves
    Garam masala - 2 tsp
    Fennel seed powder - 1 tsp
    Salt
    Oil
    Steps:
    Crush ginger and garlic. Slit green chillies.
    Add mutton along with half of the crushed ginger, half of slit green chillies, ½ tbsp turmeric powder, pepper powder, salt and curry leaves to a pressure cooker.
    Add water and cook for one whistle. Let the pressure release naturally.
    Mutton will be half cooked by now.
    Heat oil in a pan and add crushed ginger, garlic and green chillies.
    Add finely chopped onion. Saute it till golden. It is important to finely chop and roast the onion till golden for this recipe. This gives a bright color and helps in thickening the gravy.
    Reduce the flame. Add 1 tsp turmeric powder, coriander powder and red chilly powder and saute till the raw smell goes away.
    Add finely chopped tomato, salt, cooked mutton mixture. Increase the flame.
    Add chopped coriander leaves, garam masala and fennel powder.
    Cook covered on medium for half an hour. Stir often.
    Garnish with coriander leaves and enjoy.
