    Just made this recipe. I halved it, beginning with 2 1/2 LBS of hamburger. I made this sauce exactly like Tom did, and I'll never use another recipe. Easy and absolutely delicious. I had one hotdog on a bun with the sauce, then later another hotdog and sauce without the bun. I liked both very much. Thanks Tom for sharing with us😊

    I live in NJ, but am originally from upstate NY near the VT and Canada border and this sauce is referred to as Michigan sauce in that area and is a regional favorite. If you want to get the meat fine without touching it, the secret is to use a potato masher and it works great for anyone who may be interested in knowing that tidbit. My grandmother’s recipe was well known locally and even used by local amusement parks. She was always busy making another batch. There are alot of different recipes with different spice combinations for it in the area, but my Grandma Sadie’s was always the sauce everyone asked for and wanted. Thanks for sharing your Dad’s recipe with all of us Tom. Super special when the recipe is a family treasure. Makes it feel like we received a gift. 🙂

    I’m so bummed y’all hadn’t uploaded this about a year ago when my hotdog & chili sauce loving late husband was still with us, I just know from look of it & the recipe & technique, he would’ve been absolutely in love with this sauce. He was only 53, but we’d been together 35 yrs & over all that time I’d tried countless recipes searching for the perfect one, and although he loved my cooking, I never did find a perfect sauce recipe (until now, I suspect). I’m not the biggest fan of chili sauce myself, but I’ve saved this video & I will def be making some for our next summertime family get together, and I will for sure be eating one in his honor & enjoying every bite. Thank you so much for sharing your dad’s recipe with us! I just checked out some more of your videos and you’ve just earned a new subscriber 💜

      Teri, I am so sorry about the loss of your husband. I just don’t know how I would ever get over it if I lost Melissa. I cannot imagine the sadness and hurt that you have experienced.
      I am also sorry that your husband never got to try my dad‘s hotdog sauce. We, along with thousands of other people over the years, think it is the best ever. I wish your husband could have tried it. And reading that you are going to eat a hotdog in his memory brought tears to my eyes . Even though you’re not crazy about hotdog sauce, I hope you enjoy every bite of the one you have in memory of your husband. I know he will be watching you eat that hotdog and smiling from ear to ear.

It’s coming up on 2 yrs now and some things have gotten a bit easier, but others I don’t believe I will ever get over. 35 yrs (2/3 of my life) is a very long time to be with someone to then have them ripped from your life. It’s not an experience I’d wish on anyone. I’m planning on making your dad’s sauce for our July 4th get-together and I’ll def enjoying every bite of that hotdog 💜 thanks again

    HOLY COW! I just made this today while it’s sleeting and snowing outside. This is without a doubt the best sauce I’ve ever tasted! Halved the recipe and followed the instructions. I will never have another can of hot dog sauce in my house. This is THE ONE!

    Mr Tom, Milton here from Southeastern North Carolina. A play on words (hotdog chili) you are very correct here. I would guess everyone that cooks knows that chili and hotdog chili is two different animals just never thought about it. I have watched other videos using water as you said, I see no use for water except for drinking and coffee! I have always brown the meat and onion together, the way I was thought. This makes all the sense in the world. A new subscriber just yesterday - did a great job with this presentation. 👍

      Here in Central NC Hot Dog sauce has no meat. Hot Dog chili does. It will always be chili to me. But I do love some good Chili beans.

    I just wanted to say, thank you for sharing your dad's secret sauce!! I have tried for many years to make the perfect hot dog sauce and I think I have found it with this recipe. I was skeptical about beginning with tomato juice instead of water or beef broth and it truly made a world of difference in the flavors. I was also skeptical about adding so many onions but thought to myself, just go with that amount and see how it turns out. Well, I'm here to tell you, the onion's cooked down and it was the perfect amount. I have no interest in perfecting the "Perfect" sauce now because your dad has gave the world the greatest hot dog sauce ever made, and you don't mess with perfection!! THANK YOU! THANK YOU! THANK YOU!! Please keep sharing those secret recipes!! YUM!

    My husband made this recipe several months ago and we froze it in small batches as you suggested. We just ate hot dogs for supper with this sauce, thawed and warmed from the freezer. They were the BEST hot dogs ever!! Thanks, Tom and Melissa!!

    Wow, this recipe looks wonderful.
    For your benefit I have included you recipe with edits for clarification. Continued success & blessings.
    Homemade Thick Hot Dog Sauce
    Ingredients
    5 pounds hamburger
    2 - 46 ounce cans tomato juice
    5 teaspoons salt
    3 large onions, chopped
    5 Tsp Salt for the onions
    1/2 cup chili powder
    1 teaspoon pepper
    1/4 cup sugar to reduce acidity
    1 6oz can tomato paste
    Prepare
    Place hamburger meat, one can of tomato juice in a large kettle.
    Mix together with your hands until fine. The meat should be mushy. Add salt & stir
    Cook over medium-high heat to gently bubbling.
    Simmer until the meat is no longer pink. Stir often so it doesn’t stick.
    While the hamburger is cooking, place onions, salt, and ½ (light) cup of water in a saucepan and partially cook (not translucent). Do not overcook or the onions will be mushy.
    Set aside, but do not drain the liquid off the onions.
    Once the hamburger is done, drain all the grease off the hamburger.
    Return the hamburger meat to your kettle.
    Add in the chili powder, black pepper, and sugar. Stir and mix really well.
    Add the onions with the water and about half of the other can of tomato juice and the tomato paste. Stir until all of this is well incorporated.
    Cook gently on Med-low until thickened enough for your hot dog sauce. If needed add more Tomato sauce.
    It will continue to thicken a little as it cools.
    Freeze excess in freezer bags by portions.

      You only put 1 tsp. salt in the onions, not 5! He said a total of 6 tsp. salt (5 tsp. in beef).

    Great video, I can’t wait to try this sauce. Myself and a buddy of mine founded a hotdog shop in Pa. I made all the sauces, we had three. I’m big and my buddy was skinny so we called it the BigSkinny Hot Dog Shop. I made a sauce similar to yours and called it Big Sauce, another was like a Greek Sauce and we called it Skinny Sauce. The third sauce was inspired by my mother’s baked beans and hamburger mixture. I called it BeanDog Sauce. This was our crown jewel sauce. People came from miles and miles just to get a BeanDog. It was a bit sweet, the Big Sauce was spicy hot(cayenne pepper), and the Skinny Sauce was just not spicy hot for those with mild taste buds. The BigSkinny has been shut down for about 8 years now but folks still seek out my recipes. I’m always glad to share. Blessings my friend!

      ​@@comesitatmytable9044 you have to try it on your chili cheese burgers. I got slaw on sandwiches like that when I lived in North Carolina but wasn't a fan. Need to try it again now that my tastes have matured. I love Sauerkraut on my chili cheese dogs though🤗👍 !!!

      From Sharon, my mom made good hot dog sauce, similar to this one.
      We sold the sauce on a hamburger bun, which we called sloppy joes. I was at an auction the other day and asked for a sloppy Joe, they were like, what!. Lol

    I love Chili on my hot dogs but I am going to try this.. thanks I am going to "try" break it down again since I am alone, my husband passed away in 2022. I don't know about slaw but onions, mustard and sauerkraut was what our mom put on our hot dogs and I still do the same at the age of 76. Your directions are also so easy to understand.     You know I was watching chicken and dumplings videos and it recommended this video . I watched and as I watched , I kept having the feeling these people seem familiar for some reason , was it his manner of speech , his actions through out the video . Not sure what it was but you know when something seems like well home or neighborhood , that good feeling you get . I live in the Philippines and have to say I love it here , the weather is awesome low to mid 80's year around , But I was born and raised in Corbin Ky , just down the road from you all . I loved the video and clicked the more to see it all written out and that is where I saw the Mt Sterling KY and it hit me that is it . these are home folks .     I'm a 70 year old lowland Tarheel now living in New Jersey. One of my favorite memories from back-home are hot dogs from the traditional hot dog stand. We never made our own hot dogs, we just went to the stand. This recipe is by far the most convincing hot dog sauce that I've run across in years of trying to find a recreation of NC hot dog stand hotdog "chili " as we called it. Every part of this recipe makes good sense. As fate would have it we're having a church choir party a week from today. The host usually offers hot dogs but not hot dog sauce. If these Yankees turn up their noses at it (they can be weird about "strange cuisine"), more for ME! Come to think of it, I should probably bring the mustard, slaw and diced onions too.

      You've ever been to New York, Connecticut, Massachusetts ... Coney Island hotdogs? Add: "Diners, Drive-One and Dives" has a show in Providence, Rhode Island about this sauce. The New England thing is to sprinkle celery salt on it after it's in the bun and has sauce on it as well as chopped raw onion. Add mustard. Ask for "the works."Welcome to the North, North Carolina! BTW, we also love boiled peanuts 😉

      Same Tarheel born and still a 53 year old Tarheel. There definitely is a difference from the hot dog sauce of my youth and what they serve now .I also have been in search of that old style sauce from the past, nothing compares. today all i find at hot dog stands is ketchup based sauce, disgusting. It has so much ketchup in it that's all you taste. This does seem like it would be close and i will be trying it this weekend. thanks for sharing the recipe.

      Not sure where in New Jersey you are living in but there are tons of great hot dog joints here that will beat the brakes off on any North Carolina joint. You just have to look for them.

    Spoken like a true and sincere WV. sure hope you can get Melissa to try them. We had a good place for years to get great hot dogs (King Tut Drive Inn. but now it's closed. You might like a toasted English bun. which gives it a nice and different taste. I enjoyed it. thanks

    Tom and Melissa, I have watched so many of your videos today that I am starting to feel like we are family. I have printed out a few to try in the next week. I love that you give the history of the recipes, as well. And thank you so much Melissa for typing them all up for us. I did order the pastry mat from the yeast rolls recipe, so you get a commission from that. I hope to order your cookbook soon. I am going to get the ingredients to make the rolls and your daughter's Swiss Vegetable Casserole tomorrow or Tuesday when I go in town. I have a Mennonite store nearby, too, and I love buying things from there. I can easily spend a small fortune there when I go. There is a bigger one farther away, but I do not get to go that far very often, but the bakery there is much bigger and they have so many more options. Thanks again for all you do.     I am a West Virginia girl and have lived in many other states and no other state can come close to the West Virginia hot Dog! It is the most delicious hot dog out there. When you ask for sauce they look at you like you are crazy. I have people actually put chile with beans on my hot dog! I have never made my sauce like yours but will have to try it some time. My mama made the best West Virginia hot dog sauce and now I follow her recipe.

    We don't eat ours with coleslaw but love it with yellow mustard and chopped onions....and a grilled bun. Looks yummy...my son and I like to try different sauces so we will for sure be giving this one a go.

    Just watched your hot dog sauce video. I will be making this... looks great!! I've always used the canned. I'm from Beaver, West Virginia, now living in Ohio. We had a repairman out and I mentioned we recently moved from West Viginia and he said, "Wow, the home of the Slaw Dog!!" He said he loved them. Folks here in Ohio can't believe we put slaw on hot dogs. I don't want one without sauce, onions and slaw. Thank you for the sauce recipe. No more canned for us!

    Thank you for sharing your recipe. It has brought back a fond memory. I grew up visiting my grandmother in Quiet Dell WV. Every year, on our return home, we stopped at a drug store in Fairmont WV that had a corner food counter. We would buy a dozen hot dogs with sauce on them. Oh how we loved them!

    lol wow, this brings back memories. Are used to make the sauce for selling my hotdog cart in the late 80s in Carbondale Illinois almost the exact same sauce. I had a few different things to it but it’s pretty much the same thing. Glad you were allowed me to have that memory again, keep bringing back the season, nostalgic recipes.     Thanks for putting this up. Just made some, and man is that tasty. I adjusted the amount a bit and reduced the salt percentage, but man is it good.
    2lbs. Hamburger
    18oz tomato juice for cooking, and 10oz. After the drain
    1 1/4 tsp. Salt
    1 big onion
    1/4 cup chili powder
    A bit of pepper
    2 tbsp sugar

    I worked in institutional foods as a Food Service Director for 20 years. We always cooked our ground meat for pasta, chili, tacos, etc. by boiling in a little liquid. A great way to add a little flavor and get a very smooth product.

    Have not made the sauce yet but definitely will soon. Paula Deen did a show on chili dogs. She had the Executive Hot Dog Chef from Sara Lee on the show and he fried the hot dogs in an iron skillet in butter. Every time we cook hot dogs or smoked/polish sausage we brown it in butter. No substitute for the enhanced flavor.

    Tip: Put the tomato paste into the pot before you add the tomato juice. Pour some of the tomato juice into the paste can and stir it with a fork to dissolve every last bit of tomato paste. Add it and the rest of the tomato juice to the pot. You will have all the flavor you can get out of that little can.

    1Lb Recipe:
    1Lb Ground Beef
    1tsp salt
    1 medium onion diced
    5tsp Chili Powder
    A couple if shakes of pepper
    2.5tsp of sugar OR 10grams
    18.4oz tomatoe juice
    1oz tomatoe paste.
    My notes: Tomatoe juice: either use 2 and a quarter cups of a large can, or use 3 small cans from a six pack.
    You can can also freeze tomatoe juice, or use for homemade tomato soup.
    Homemade tomato soup: 1part juice, 3parts milk, pat of butter. Microwave until hot. Salt and pepper it when done.
    Tomatoe Paste: You can nix it if you want. Or freeze it as 1oz cubes. Or buy a squeeze tube which will last a few months.

    I have been looking for a chili sauce recipe! But I didn’t want to just try out a recipe without seeing it made in a video. And you’re right about some people cooking their ground beef in water. Why do that when you can get the flavor cooked in from the tomato juice! Looks delicious.
    We fed a group of kids on a field trip one day after our family moved to Peachtree City, Georgia from Louisiana. My husband transferred with his International Paper Co job. I think I had to bring the buns. Was I ever surprised when all we had to dress those hotdogs was mustard, Mayo, ketchup, and sweet relish!! Was I so disappointed!!! I kept waiting on someone to bring out a crockpot full of hotdog sauce! Nope! Didn’t happen! My son looked around and said where’s the hotdog sauce Mom! I said all I was told to bring was buns. He said, Mom, next time will you make some sauce! I told him we would show those guys how to eat a proper hotdog! Lol I hope I don’t offend those relish eaters but if so, why are you watching a hotdog sauce video?!

    I made this yesterday and after the first dog topped with sauce I went right to the sauce with yellow mustard and onion on a bun.

    1. That looks delicious. The Chuck Wagon in Sanger makes a similar sauce but calls it chili. It's really good!
    2. I was not grossed out by the hand smashing of the meat, but I think the inventor of the potato smasher would like to have a talk with you. 😂
