This is so impressive, using bone parts to brew the soup and taking time to prepare the all the ingredients. The 3 brothers are so passionate about cooking all these delicious dishes. 一つ一つの手さばきのなかに素材への愛情、料理の質への厳しい眼差し、が感じられる。一段落したときの、台所のステンレスを何気に拭く仕草にも熟練が感じられる。いわゆる名店というのはこういう人が作り上げていくんだろうなっていう、良い記録になっていると思います。素材も良いものを選んでるとわかるし、またその素材を大事にしている。すべての手つきが、素材から味を引き出すことだけを考えていると伝わってくる。すごいですね。
