  • A mutton stew that is ultra-flavourful and is prepared with a mix of your favourite whole spices.
    KHADE MASALE KA STEW
    Ingredients
    750 grams mutton, cut into 2 inch pieces on the bone
    3 medium onions
    3-4 tbsps oil
    2 tsps cumin seeds
    8-10 cloves
    8-10 black peppercorns
    4-5 green cardamoms
    2 black cardamoms
    1 inch cinnamon stick
    1 bay leaf
    2 Kashmiri dried red chillies, stemmed
    2 tbsps chopped garlic
    1½ tbsps chopped ginger
    2-3 green chillies, slit
    Salt to taste
    2 tbsps chopped fresh coriander
    Fresh coriander sprig for garnish
    Method
    1. Slice onions.
    2. Heat oil in a pan. Add cumin seeds, cloves, black peppercorns, green cardamoms, black cardamoms, cinnamon, bay leaf, dried red chillies and sauté till fragrant.
    3. Add sliced onions and sauté for a minute. Add garlic, ginger, green chillies and sauté for a minute.
    4. Add mutton, salt and sauté on high heat for 5-6 minutes.
    5. Add 1 cup water and mix. Cover and cook on medium heat for 35-40 minutes.
    6. Add coriander and mix well.
    7. Transfer into a serving bowl. Garnish with coriander sprig and serve hot.
