  • 2 variations of "cup cake" as they were in 1828 and 1829. Small cakes cooked in cups, hence the name. A gingerbread cupcake & a more modern tasting white cupcake? Let's recreate them as they were 200 years ago! Like always an image of the original recipes (or receipts as they were once called) at the end of the video.

    Cakes used to be a lot more dense, mostly due to baking powder and baking soda being mid 19th century inventions. The leavening agents that existed were not as effective as what we have now. Watch us chat about these cakes on our 2nd channel 😊 : ruclips.net/video/Vr855Aqsu9s/видео.html

      @Av8 We used to eat raw egg Whites in the 1950's and never had a problem. I think that is a recent issue.

    Of course cupcakes were originally baked in cups! I had never considered this before, but it makes perfect sense that this is how it was done before the manufacture of specialized baking pans. Thank you for bringing history to life!

    This reminds me of staying at my grandparents when I was younger. I am almost 40 and they didn't get power or running water until I was 15. A lot of people don't believe me when I say. I know how it was to live like that. I loved it.

    What a coincidence! Last week I made a mid-Victorian version of the gingerbread cupcakes, using baking powder, soda, 1 egg and mace instead of cloves. They are delicious!

      It also reminds me of my mom's war cake. It was made during WWII. The only difference is it had added raisins. Very good either way.

    Both of those cupcakes looked delicious. I can't believe the gingerbread ones had to bake for a year though! The other ones only took 45 minutes. People must have had a lot more patience in the 1820s! 😃

    I’m curious how you know the temperature of the “oven” in the fireplace. Is this something you just learn with experience?

      With fireplace baking, it's most likely something you learn with experience. However, my main question is whether I should just base the baking temperature on 300-350F, as I noticed that in the original 1829 receipt, the author did not provide a temperature at all. The recipe simply said to bake. The 1828 receipt indicated a moderate oven, which would be around 300-350F.

      @@pamelawinkelmann6229 Doesn't make sense to specify a temperature when a choice is not available. Today, we have the luxury of many choices. If I don't have a certain detail of a recipe (such as temperature) I consult several modern recipes and ago with the consensus.

    My grammy used to make me molasses cookies when I was a child and they were my favorite. I often make myself cupcakes now as an adult and I forgo the frosting and I will teasingly call them muffins. I think I will try this recipe next time! Thank you!

    I love cupcakes 🧁! I always make cupcakes 🧁 for every social event 😋! I tried making cupcakes 🧁 for my cousin Elizabeth's funeral, but my aunt told me that I didn't need to bring cupcakes. They were Elizabeth's favorite flavors, which were chocolate 🍫 and red velvet. Elizabeth died 4 years ago and would've been 40 years old already.

    Justine, the gingerbread recipe called for a 1/2 cup of ginger. Would that have been grated fresh ginger? I say this because with the other spices, it specifically calls for powdered. Just a thought. Anyhow, they all looked delicious! Yum! Yum! Sue

    I really enjoy watching your cooking videos. My one question is how do you keep the food cold or refrigerated to prevent spoilage?

      Probably root cellars

      My mother grew up like this and they had a spring house. It’s a small shelter in or over a natural spring coming up out of the earth. They’re much cooler than anyplace else. It’s where they stored butter or any perishable foods they might have had.
