My Mum always cut them with a knife, all different shapes and always put them on the tray touching each other. That way they help each other rise. They look good.
Been making scones for 50 years. Glad to see you doing them. Scones are best made as quick as possible and I have never heard of vanilla essence being used. When I was a child and young woman they were an absolute staple everywhere. Plain, fruit, cheese, cayenne and pumpkin. Fruit used was always dried fruit. Great days, every woman had her own recipe.
Thanks for sharing this recipe, Mary. I will need to try it. It's an odd recipe and unlike any other scone recipe I've used. I've never seen the sugar being dissolved in the milk. That's new to me. When I make scones I like to put lemon zest and dried blueberries in the scones. 😊
Mary I was born in Liverpool U.K. and my mum made a ton of scones over the years. I live in Florida now and make scones as treats and special occasions and people love them. I only use a good fresh S.R. flour, butter, sugar and freezing cold water to bind together. I have never used eggs in mine as I think they just did that because of shortages and low incomes or adding luxury things. I have found living here that if I add 1/3 krusteaz pancake mix to 2/3 flour I get a marvelous rise and flavor too and a happy accident by adding craisons instead of raisons are to die for. My mum mixed every dough she made in the sink to contain the mess and I do that as well now xx Also scones mellow with age and you will enjoy them more after 2-3 days when kept in a tin or zip bag.

Mary's Nest Mary my mum was a super baker and she baked every Sunday for the week followed by a night of ironing. Funny how we remember things from childhood, we didn’t have much but never knew it. I refer to my school days text cook book called learning to cook somehow I still have it after all these years and has lots of recipes and how to serve and behave too 😀
Hi Mary. My neighbour makes scones with Self-raising flour, sugar, butter and milk that has soured (either naturally or by adding lemon juice) and that’s it! They are the most beautiful, fluffy scones I have ever eaten. I’ve never seen vanilla essence added to scones before and most of the time my family prefer them plain with no fruit. At school in Devon, England we were taught to make sweet scones with a fluted cutter and savoury scones with a plain cutter and we were taught that scones are 10 minutes to make, ten minutes to bake. Thank you so much for this recipe. I tried this one and your clotted cream recipe. It was amazing. I found it so difficult to kneed the dough well as it kept on breaking. But I added little bit liquid from the wet mixture and put it together. at the end it was all so worth it. I added cranberries and stevia for it all. Sugar free and tasted delicious. Thank you so much for this authentic scone recipe. I am from Australia and can't believe the big supermarket ones tastes like plain flour and so hardened.
Instead of vanilla extract, I substitute a bit of lemon juice. As I make plain scones, I think the very light lemon flavour goes wonderfully with strawberry preserves. 🤗
Mary greetings from Ireland,you can use buttermilk,make your ball in your mixing bowl ,bring it all together,much easier than what you are doing,.you will get a better scone,add the milk bit by bit. Let them rest for about 25 minutes before you put them in the oven. I enjoy your program.

Hi Mary, I’m so glad you got the pronunciation of scone right so many get it wrong, did you know that here in the UK there are two ways of serving scones, the Devonshire way and the Cornish way, yours was the Devonshire way with clotted cream first then the jam, Cornish is jam first then cream. Can’t wait for the clotted cream recipe.

But she married an Italian and moved to Italy in her 20s. She taught my grandfather (her son) how to speak “proper” English and he grew up to work for an American business man as a personal assistant and travel the world. I completely disagree, there are as many people pronounce them as ‘sc-ons as those that say ‘scowns’ . There isn’t a definitive way ( same as in Cornish vs Devon serving )

Thanks for sharing. Those look delicious. Daniel's hair is looking curly like it did when he was younger. Probably because he hasn't had a hair cut in awhile. I have to pick up everything that was in his school locker on Thursday. His teacher said to just drive by and they will be brought to us. I called Dad (Lee's; mine died over twenty years ago) to see if he could take us since Mom and Lee work that day. Dad's retired so other than doctor's appointments and his usual weekend plans with his peers he's free most of the time.
Live the way you explain the recipe. We celebrated the end of World War 2 last month with lots of bunting but sadly due to social distancing no street party. As a treat for my family I made carrot scones from an authentic war time rationing recipe. The dough was jolly sticky but the scones were delicious and you wouldn't know carrots were in there

Hi Mary, we made these yesterday and WOW!! Best scones we've ever eaten, and we've eaten plenty!! Hubby is British and I'm American, but living in the UK for 18 years. Lots of time to become an expert scone taster!! We only had one "oops" with following the recipe. We couldn't see, on the printed recipe, when to add the currants. We were turning the dough out onto the board and said, "Hey! We didn't put the currants in!! When I re-read the recipe, I couldn't find where it said when to add the fruit. We managed to work plenty of currants into the dough and no scones were harmed in the process. LOL. I've re-watched the video and now know to add them after the butter is crumbled into the flour. Yummy!! I'm not keen on clotted cream, but a bowl of sweetened whipped cream goes down a treat with the strawberry jam. Thank you for this gorgeous and truly authentic scone recipe.
Normally you don’t roll out your mixture, you just pat it. The fluted cutter is for sweet scones and a straight cutter is for savoury. You can also use Bread Flour.

Scones probably originate from Scotland. Yes, the first print reference dates back to 1513 and is from a Scottish poet Ingredients for traditional basic Scottish Scone: 500g flour although ground oats where used instead of wheat flour originally, 4 tsp of baking powder, 100g butter, approximately 350g milk and a pinch of salt. No eggs and no vanilla. This recipe is still used today.
England, Scotland and Ireland all have their own versions of the scone. It’s not really known which came first, but it’s the traditional English scone that is most famous throughout the world, largely because of the ‘Cream Tea’ of Devon and Cornwall, with lashings of local clotted cream and homemade strawberry jam! Yum!

Mary as an award winning scone maker in teenage years, in Australia. We use cold butter chopped up, as you did , and use fingertips to rub into flour. Very important not to warm butter so NEVER get on warm palms. Aus SKONS. Are flour baking powder, small amount of butter, salt and milk. Ours are exquisite light fluffy and eaten hot with butter or whipped cream and jam. Not the weird sweet English version. We also make pumpkin SKONS Not scOHnes. We do not roll, do not overwork which toughens. We mix by hand in lightly in a few seconds and very lightly cut and into very hot oven within seconds, We don’t use flutes. Maybe ours in Aus are more irish version, not sweet not heavy handed. Thanks Mary, interesting to see a different version, How interesting, we put jam on hot scone then top with cream. Not the reverse as you do.
Mary's Nest yes Mary, the more private domestic non chef recipes have kept their truth, not messed up by chefs nor mixed up and altered. It’s important home cooking skills are kept and treasured, as women’s work. The Country Women’s Association in Aus has kept the standard for many recipes here, which leads me to think our scones could have been irish based, so many irish girls....famine orphans were brought out in late 1840s and many to rural NSW and of course many irish so brought different values, my mother made champagne pastry, self raising, some cornflour to normal flour, egg butter and very little milk. I found it everywhere in Ireland a few years ago, barely sweetened apple pies, champagne pastry cooked on a baking sheet, Served with good thick Irish cream, and handmade with love, everywhere, the scrappiest roadside cafe to the Archeology Museum tea room. I spoke to the cafe woman, yes it’s home made she said, they wouldn’t eat the other kind. So good. Champagne pastry might be a nice thing to show. Tiniest amount of sugar.. teaspoon. It’s very rural non commercial. Lovely. Again the pastry is treated lightly, not heavily rolled.
This is how we do them in New Zealand too. I've never added eggs of vanilla extract to them either (those are not a thing here), but I have made scones with cheese (no sugar in those), dates, sultanas/raisins. All are yummy.

Mary's Nest I’ve never used eggs or vanilla in scones. I would have used more dried fruit, but that’s a personal preference. And my butter would have been frozen, then I would have grated it into the flour, but they certainly looked the part and I’m sure they tasted delicious, too!
Mary - every time I see people sprinkle flour from a container I want to tell them how I do it. One of those large sugar shaker jars you see with the big holes? they hold 2-3 cups of flour. I keep those full of flour and just shake the flour onto my board. if I need more on top of a dough? then just shake some on the top. that way you don't accidently dump too much flour.

That's a great question! I really don't know the answer. I thought it should be cold too but my friends said to make sure it was room temp and work it into the flour really well. This "colonist" (as they tease) wasn't going to argue with the Brits! LOL!! Love, Mary

Scones are Scottish not English .... pronounced SCAWNs .. not SCOONS
My Mum always cut them with a knife, all different shapes and always put them on the tray touching each other. That way they help each other rise. They look good.
Been making scones for 50 years. Glad to see you doing them. Scones are best made as quick as possible and I have never heard of vanilla essence being used. When I was a child and young woman they were an absolute staple everywhere. Plain, fruit, cheese, cayenne and pumpkin. Fruit used was always dried fruit. Great days, every woman had her own recipe.
Thanks for sharing this recipe, Mary. I will need to try it. It's an odd recipe and unlike any other scone recipe I've used. I've never seen the sugar being dissolved in the milk. That's new to me. When I make scones I like to put lemon zest and dried blueberries in the scones. 😊

Mary I was born in Liverpool U.K. and my mum made a ton of scones over the years. I live in Florida now and make scones as treats and special occasions and people love them. I only use a good fresh S.R. flour, butter, sugar and freezing cold water to bind together. I have never used eggs in mine as I think they just did that because of shortages and low incomes or adding luxury things. I have found living here that if I add 1/3 krusteaz pancake mix to 2/3 flour I get a marvelous rise and flavor too and a happy accident by adding craisons instead of raisons are to die for. My mum mixed every dough she made in the sink to contain the mess and I do that as well now xx Also scones mellow with age and you will enjoy them more after 2-3 days when kept in a tin or zip bag.

Mary's Nest Mary my mum was a super baker and she baked every Sunday for the week followed by a night of ironing. Funny how we remember things from childhood, we didn’t have much but never knew it. I refer to my school days text cook book called learning to cook somehow I still have it after all these years and has lots of recipes and how to serve and behave too 😀

Hi Mary. My neighbour makes scones with Self-raising flour, sugar, butter and milk that has soured (either naturally or by adding lemon juice) and that’s it! They are the most beautiful, fluffy scones I have ever eaten. I’ve never seen vanilla essence added to scones before and most of the time my family prefer them plain with no fruit. At school in Devon, England we were taught to make sweet scones with a fluted cutter and savoury scones with a plain cutter and we were taught that scones are 10 minutes to make, ten minutes to bake. Love you channel - I’m in the middle of making your cream cheese! 😊

Thank you so much for this recipe. I tried this one and your clotted cream recipe. It was amazing. I found it so difficult to kneed the dough well as it kept on breaking. But I added little bit liquid from the wet mixture and put it together. at the end it was all so worth it. I added cranberries and stevia for it all. Sugar free and tasted delicious. Thank you so much for this authentic scone recipe. I am from Australia and can't believe the big supermarket ones tastes like plain flour and so hardened.
Instead of vanilla extract, I substitute a bit of lemon juice. As I make plain scones, I think the very light lemon flavour goes wonderfully with strawberry preserves. 🤗
Mary greetings from Ireland,you can use buttermilk,make your ball in your mixing bowl ,bring it all together,much easier than what you are doing,.you will get a better scone,add the milk bit by bit.
Let them rest for about 25 minutes before you put them in the oven.

Hi Mary, I’m so glad you got the pronunciation of scone right so many get it wrong, did you know that here in the UK there are two ways of serving scones, the Devonshire way and the Cornish way, yours was the Devonshire way with clotted cream first then the jam, Cornish is jam first then cream.

But she married an Italian and moved to Italy in her 20s. She taught my grandfather (her son) how to speak “proper” English and he grew up to work for an American business man as a personal assistant and travel the world. I completely disagree, there are as many people pronounce them as ‘sc-ons as those that say ‘scowns’ . There isn’t a definitive way ( same as in Cornish vs Devon serving )

Thanks for sharing. Those look delicious. Daniel's hair is looking curly like it did when he was younger. Probably because he hasn't had a hair cut in awhile. I have to pick up everything that was in his school locker on Thursday. His teacher said to just drive by and they will be brought to us. I called Dad (Lee's; mine died over twenty years ago) to see if he could take us since Mom and Lee work that day. Dad's retired so other than doctor's appointments and his usual weekend plans with his peers he's free most of the time.

Live the way you explain the recipe. We celebrated the end of World War 2 last month with lots of bunting but sadly due to social distancing no street party. As a treat for my family I made carrot scones from an authentic war time rationing recipe. The dough was jolly sticky but the scones were delicious and you wouldn't know carrots were in there

Hi Mary, we made these yesterday and WOW!! Best scones we've ever eaten, and we've eaten plenty!! Hubby is British and I'm American, but living in the UK for 18 years. Lots of time to become an expert scone taster!! We only had one "oops" with following the recipe. We couldn't see, on the printed recipe, when to add the currants. We were turning the dough out onto the board and said, "Hey! We didn't put the currants in!! When I re-read the recipe, I couldn't find where it said when to add the fruit. We managed to work plenty of currants into the dough and no scones were harmed in the process. LOL. I've re-watched the video and now know to add them after the butter is crumbled into the flour. Yummy!! I'm not keen on clotted cream, but a bowl of sweetened whipped cream goes down a treat with the strawberry jam. Thank you for this gorgeous and truly authentic scone recipe.
Normally you don’t roll out your mixture, you just pat it. The fluted cutter is for sweet scones and a straight cutter is for savoury. You can also use Bread Flour.

Scones probably originate from Scotland. Yes, the first print reference dates back to 1513 and is from a Scottish poet Ingredients for traditional basic Scottish Scone: 500g flour although ground oats where used instead of wheat flour originally, 4 tsp of baking powder, 100g butter, approximately 350g milk and a pinch of salt. No eggs and no vanilla. This recipe is still used today.
England, Scotland and Ireland all have their own versions of the scone. It’s not really known which came first, but it’s the traditional English scone that is most famous throughout the world, largely because of the ‘Cream Tea’ of Devon and Cornwall, with lashings of local clotted cream and homemade strawberry jam! Yum!

Mary as an award winning scone maker in teenage years, in Australia. We use cold butter chopped up, as you did , and use fingertips to rub into flour. Very important not to warm butter so NEVER get on warm palms. Aus SKONS. Are flour baking powder, small amount of butter, salt and milk. Ours are exquisite light fluffy and eaten hot with butter or whipped cream and jam. Not the weird sweet English version. We also make pumpkin SKONS Not scOHnes. We do not roll, do not overwork which toughens. We mix by hand in lightly in a few seconds and very lightly cut and into very hot oven within seconds, We don’t use flutes. Maybe ours in Aus are more irish version, not sweet not heavy handed. Thanks Mary, interesting to see a different version, How interesting, we put jam on hot scone then top with cream. Not the reverse as you do.

Mary's Nest yes Mary, the more private domestic non chef recipes have kept their truth, not messed up by chefs nor mixed up and altered. It’s important home cooking skills are kept and treasured, as women’s work. The Country Women’s Association in Aus has kept the standard for many recipes here, which leads me to think our scones could have been irish based, so many irish girls....famine orphans were brought out in late 1840s and many to rural NSW and of course many irish so brought different values, my mother made champagne pastry, self raising, some cornflour to normal flour, egg butter and very little milk. I found it everywhere in Ireland a few years ago, barely sweetened apple pies, champagne pastry cooked on a baking sheet, Served with good thick Irish cream, and handmade with love, everywhere, the scrappiest roadside cafe to the Archeology Museum tea room. I spoke to the cafe woman, yes it’s home made she said, they wouldn’t eat the other kind. So good. Champagne pastry might be a nice thing to show. Tiniest amount of sugar.. teaspoon. It’s very rural non commercial. Lovely. Again the pastry is treated lightly, not heavily rolled.
This is how we do them in New Zealand too. I've never added eggs of vanilla extract to them either (those are not a thing here), but I have made scones with cheese (no sugar in those), dates, sultanas/raisins. All are yummy.

Great recipe Mary. We will have to try this recipe. The best scones I've ever tasted were at the Schenley Park Cafe and Visitor Center when I lived in Pittsburgh. Yours look just as tasty.

Hi Mary l am very puzzled all the scones l have ever made have always had cold butter in and even when you put it in you end up with the butter still showing l have never try this one you have got but l am going to try it thanks so much Sue from the UK x
Hi Susan, I thought that too but my friends said to make them with room temp butter and mix it with the flour until it looked like sand. Might there be regional differences? They are in the Devonshire area. Love, Mary❤️🤗❤️
@@MarysNest Devonshire is kind of the home of English scones. And they tasted so good, I wouldn't do it any differently! And we live up in the Northwest, near Liverpool.
Yes! Ugh, I love it!! You’re just lovely. I love you. Can I use my Kitchenaid stand mixer, or should I do it by hand with the spatula so I don’t over do the dough.. what would you suggest, please!? ♥️💛

Mary's Nest I’ve never used eggs or vanilla in scones. I would have used more dried fruit, but that’s a personal preference. And my butter would have been frozen, then I would have grated it into the flour, but they certainly looked the part and I’m sure they tasted delicious, too!

shell c salt, yeah. Unless I’ve used salted butter. On the rare occasion I feel frivolous enough to buy butter, I usually buy salted.

Mary - every time I see people sprinkle flour from a container I want to tell them how I do it. One of those large sugar shaker jars you see with the big holes? they hold 2-3 cups of flour. I keep those full of flour and just shake the flour onto my board. if I need more on top of a dough? then just shake some on the top. that way you don't accidently dump too much flour.
Can you use the liquid left over from the clotted cream video in making your scones?

That's a great question! I really don't know the answer. I thought it should be cold too but my friends said to make sure it was room temp and work it into the flour really well. This "colonist" (as they tease) wasn't going to argue with the Brits! LOL!! Love, Mary

Thank you for this recipe! Edit: Would you ever consider a collab with Townsends? They do historical recipes. Also, "It's Alive" on Bon Apetit, they do a lot of fermentation. The "It's Alive" stuff, that is, but some do also use fermentation outside of that.
