Incredibly Decadent Peanut Butter Chocolate Cake

  • This Peanut Butter Chocolate Cake is incredibly moist and rich. It's decorated with a glossy chocolate ganache drip, making it the perfect cake for celebrations or everyday indulgences.

    Ingredients
    For the cake layers
    1 ¾ cup all-purpose flour (220g)
    1 cup light brown sugar, firmly packed (200g)
    1 cup granulated sugar (200g)
    ¾ cup dark cocoa powder (75g)
    1 ½ teaspoons baking soda
    ½ cup unsalted butter, melted (113g)
    ⅔ cup vegetable or canola oil (you may substitute any neutral cooking oil) (155ml)
    2 large eggs, room temperature preferred
    2 teaspoons vanilla extract
    1 cup buttermilk (226ml)
    ½ cup very hot water (118ml)
    For the peanut butter frosting
    2 cups unsalted butter, softened (452g)
    2 cups creamy peanut butter (490g) (I do not recommend using a “natural” peanut butter/the kind where the oil separates)
    6 cups powdered sugar (750g)
    2 teaspoons vanilla extract
    ½ teaspoon table salt
    2-4 Tablespoons milk (I use whole milk, but you may substitute any milk you have on hand or even half and half or heavy cream)
    For the ganache (optional).
    4 oz semisweet chocolate (chocolate chips or a chopped baking bar will work) (113g)
    ½ cup heavy cream (118ml)

    I made this cake for Easter. I put a Twix cross on the top and surrounded it with speckled egg Whoppers. EVERYONE loved it! There were several other desserts. But this one was the crowd favorite. Everyone commented on it. And everyone came back for more!!! Thank you for another home run! ⚾

    Hey Sam, this cake was a big hit at the Bible study group I took it to last night. I did not double the frosting, but there was still plenty to pipe some small stars on top. The cake itself was so incredibly moist and delicious. (I never knew how bad box cake was until I started making your scratch ones) Thank you so much for your tutorials. It makes all the difference to visual learners like me.

    Oh. My. God. This is a GREAT recipe. I decided to try it yesterday because I thought chocolate and peanut butter sounded like heaven. And I was curious about the mixing of oil and butter and it is DELIGHTFUL! The texture of the cake is just moist and crumbly and it's so, so, good! I cut the recipe in half though, because I didn't want a huge 9inch. I made a 6-inch cake instead. Also, I am so grateful to you for putting weight measurements down because trying to half a recipe that uses 3/4 cups is so difficult. THANK YOU FOR THIS! I'm definitely going to try some of your other recipes!

    Hi Sam, I’ve made this wonderful cake. Oddly I’m not a big fan of chocolate and peanut butter together but the family does so i made it. It was fabulous! Very well received by all. The icing was not too sweet and tasted like a peanut butter cookie in icing form. This was the second recipe I’ve made of yours, the carrot cake was the first and it was honestly the best cake I’ve ever had. Do you have a cook book? I would love to have one. I’ve told everyone that will listen to look up your channel. Keep making videos you have fans in Canada!

    U can also use your butter wrappers (printed side to the tin). It covers most of the bottom and is a great way to reuse. I place mh butter wrappers in the freezer to store them until i need them

    Hi Sam I haven’t made a cake in my life. I am scared to try, I am scared to over mix the batter. What will I do. This will be second recipe that I will be making soon. The 1st one was Chocolate chip cookie made out cake flour.

    I also love that a lot of your recipes have butter & oil, definetly the best of both worlds for sure!! I agree about separately cracking the eggs, Im guessing you know after each egg its better to pour it in then crack the next b/c if not and you do get a bad egg it it would cause you to start over if it gets to the first one. Maybe you just quickly did it here for the video tho... Just intending to be helpful 😊 I make a lot of macarons and have to separate a lot of eggs so I know all too well how important dumping them in one by one is .. Even though it can become a bit annoying, especially when making macs!! Lbs

    I think I'm going to try making this on Friday for my Mom's birthday, as I recently discovered that I love baking, so this will be my first attempt at a birthday cake. My Mom made all of mine when I was little so, I thought it would be a fun way to return the favor! I might need to leave a note on our door though, so when Mom gets home, if I'm still working on it, she won't ruin her surprise... Wish me luck!!

      @@francineburkhardt9685 I just skipped that step and just bought reusable frosting tips and bags at Walmart, so I could frost the cake and add a few decorations to it instead.. as I don't know either, and I didn't have the supplies at the time to make some ganache.... I'm also new at baking soooo......

    Oohh and one tip I learned to do with pb frosting, is to add a little bit of pasteurized egg whites ... I know !?!? Yeah it makes it so easy to spread and even MORE creamy & even a bit shiny !! Its a Chelsweets tip... Her pb frosting recipe is of course on her channel. Between you & her channel for cake/baking I am never short for amazing recipes !! Thanks Sam !!

    Congrats Sam on 100k 🎊 i have a ganache related question, can i add orange juice to my chocolate ganache to make it taste like orange and should i omit the heavy cream if i did that or i should only add the juice after the ganache is set?

      I would be worried about the orange juice making it curdle. I think a better bet here would be an orange extract. :)

    Would this cake work under fondant and tiered? My daughter wants a chocolate peanut butter cake for her birthday and also wants fondant lol.

      You can store it at room temperature in an airtight container for up to two days or in the refrigerator in an airtight container for up to 5 days 😀

      Yes you can! Without going into the science behind it, black cocoa is more mellow and less bitter than dark cocoa powder. It provides a very dark color (like an Oreo cookie) but can be drying for cakes. I'd stick with dark cocoa powder for this one if you can, but if not, Dutch processed is good too!

      Welcome to the channel! The cake layers can be made a day in advance by wrapping them in plastic wrap (after they've cooled) and stored at room temperature. If you need to store them longer than that, I recommend freezing them. 🙂

      Due to the brown from the peanut butter it may prove difficult to get a nice green color unless you use A LOT of food dye.

    If i decide to use coffee instead of water, what brand coffee would i use? And do i have to make sure the coffee is hot? Also what brand of chocolate you use for the ganache?

      I actually use a generic brand instant coffee, so any brand will work. You do want it to be hot to make sure it "blooms" the cocoa in the cake. I like to use Ghiradelli bars or chips for my ganache :)

    Hi Sam, I made this cake and it was delicious thank you! But I encountered two problems. Firstly, there were a lot of crumbs, and secondly when I put it in the fridge on the second day I wanted to decorate it but it broke into pieces. To be honest I did add baking powder to the recipe, do you think that was the problem? If not then what is?

      O no! It probably was the result of the baking powder being added here. :( You don't need it in this cake.

    Hi Sam the leftover ganache in squeeze bottle can be refrigerated in the bottle itself? How do i reheat it in the squeeze bottle to use it again few days later? Can this be done in microwave?? Plz help

      It is going to need to be reheated and it's not quite as simple as just popping it in the microwave. I'd have to play with it a little bit to say for sure how to reheat it. :(

    Made this yesterday and it was so delicious! The only problem was that It was kind of dense. I used whole milk instead of buttermilk. Still tasted great but could that have been the cause?

      The milk substitute won't make it dense. It could dry it out a little bit. The denseness may have come from over-mixing or possibly over-baking. :(

    I noticed that your recipe online for the frosting says 1 cup peanut butter but you said in the video you are doubling the recipe? So do we just not double the peanut butter than?

    It looks like you had some extra cake mix. Am i wrong? I'm asking because I thought I might make some cup cakes with the remaining ingredients (cake mix, frosting and Ganache). How deep do you fill the cake pans?

      I did use all of the batter. Sometimes those final bits just cut for the sake of speed of the video. I just really split the batter evenly between the 3 pans. If you want it perfectly even you can weigh the batter as you divide it. :)

    I tried the recipe twice. It really tastes good. I only have one problem. Why is it that the center part sinks down. Toothpick is clean. What am I doing wrong?

      Hmmm that’s very interesting. Normally I’d say the cake just needs to bake a little longer but if the toothpick is coming out clean that’s not the case. Are you making any changes to the recipe? Are you potentially over mixing it? Is your butter too warm when adding sugars to it?

    Seems like a lot of powdered sugar for the frosting... When I make peanut butter frosting (and cream cheese frosting) i use equal parts butter and peanut butter and 1 cup powdered sugar per stick of butter. Then vanilla and salt. Whip enough air into the frosting and it's incredibly light and spreadable, I don't need to add milk.

      The recipe makes a lot of frosting to cover a three layer cake, so we need a lot of pretty much every ingredient. And while I'm glad you have a version that works well for you, I do recommend giving this one a try before you knock it! 😊
