The ULTIMATE Triple Chocolate Cake

- This triple chocolate cake is made with three layers of fudgy and moist dark chocolate cake, a rich chocolate frosting, and chocolate ganache. It’s an incredible and decadent dessert!

Ingredients
Cake Layers
1 ¾ cups all-purpose flour (220g)
1 cup granulated sugar (200g)
1 cup light brown sugar, firmly packed (200g)
¾ cup dark cocoa powder (75g) (see note)
1 ½ teaspoons baking soda
¾ teaspoon table salt
⅔ cup neutral cooking oil (vegetable, canola, or avocado) (155ml)
½ cup unsalted butter, melted (113g)
2 large eggs, room temperature
2 teaspoons vanilla extract
1 cup buttermilk (236ml)
½ cup very hot/boiling water or hot coffee (118ml)
Frosting (see note)
12 oz semisweet chocolate, chopped into small pieces (340g)
2 cups unsalted butter, softened (450g)
4 cups powdered sugar (400g)
1 teaspoon vanilla extract
¼ teaspoon table salt
2-4 Tablespoons heavy cream or milk, as needed
Ganache
8 oz semisweet or dark chocolate, chopped (226g)
1 cup heavy whipping cream (236ml)

Notes
Making in different pans
Three 8” (20cm) pans: Cake will take several minutes longer to bake.
To make in two pans (instead of 3): Cakes will need to bake longer, about 30-35 minutes in 8” (20cm) round pans or slightly less time in 9” (23cm) pans.
Cocoa powder
Dark cocoa is recommended for best flavor, but you may substitute Dutch process or natural cocoa, instead.
Frosting
This recipe makes a lot of frosting so that you can sufficiently ice the cake and do the decorative border on top, as shown in photos. If you prefer less frosting, you can reduce this recipe in half. Some other good frostings for this cake include my:

Storing
Store at room temperature for up to 24 hours or refrigerate in an airtight container for up to 5 days. Cake tastes best at room temperature so I like to pull it out of the refrigerator at least 20 minutes before slicing and serving.

Now your stand mixer isn't just lonely, it's jealous for you used the blue hand mixer instead of just the black mixer. Don't be surprised if it holds it's electric until it short circuits it's self and dies! Your soooo meeaan!!! I'm sure I will. But am going to do a couple of little tweeks to it. Instead of brown sugar use an additional tablespoon of molasses and the coffee idea, use a tsp of instant coffee crystals to it instead... Show your stand mixer some love. Get it a couple of new attachments and use them to make it feel better 😂😂😂

If you put the flour, cocoa, and baking powder or soda hrough a sieve together you don't have to worry about lumps. For buttermilk I like to mix yogurt with milk. The recipe looks amazing! (Edit: don't try to put the sugar and salt through the sieve.)

Wow. That's the most delectable chocolate cake ever. My brother used to put peanut butter in his cake batter, but not enough to tell there was peanut butter in it. Made it moist. I notice you use brown sugar like I do. It's much more hearty and flavorful than regular white sugar. It really does make a difference. Wonderful recipe.

For the frosting can I use cocoa powder instead of melted chocolate? I can’t seem to melt chocolate without it seizing (and I saw your tutorial on how to melt chocolate, but there’s no microwave at my apartment, so I can’t use that method, unfortunately, I have to use the stove to melt it)

Wow, this is exactly what I was looking for. Will have to make this soon, maybe sometime this week. Definitely using the coffee. And wondering if it would be too much if I used half buttermilk and half chocolate milk. I guess I will have to make 2 cakes and try it both ways!
I'm not sure how the chocolate milk will work. It has added sugars, and cocoa so it could change things. It also won't have the same depth of flavor as the buttermilk. I hope you enjoy the cake though. :)

@SugarSpunRun, this looks amazing! Due to anaphylactic allergy to eggs & gluten I may have to use a GF/vegan fudge cake recipe I know works but will use your chocolate butter cream & ganache recipe - unless you think substituting GF flour & "No Egg" replacer could work for the cake? I am making it for a dear friends birthday. Everything I cook has to be special diet so my daughter & I can join in. I'd appreciate your thoughts 😉😋
I haven't tried using GF flour and an egg replacer so it's just too hard for me to tell. :( If you do try it I would love to know how it turns out. It's always helpful for others if I have feedback on those substitutions. :)

It can be made in either 2 8" or 2 9" pans. For 8 inch pans they will take 30-35 minutes to bake and a few minutes less for 9". :)

I would, just to make sure you have enough. You might have a little left over, but better too much than not enough.

The buttermilk I get in stores has a much lower fat content than mock buttermilk made with whole-fat milk. I prefer the mock buttermilk for that reason.

Uh oh. I think I'll have to make this soon. Been on the hunt for my perfect chocolate cake recipe and your recipes have been solid so far so, gotta add it to the list!
When you were putting the frosting and ganache between the layers and making a bull's eye, you said you liked more frosting than ganache in between the cake layers. I'm curious to know if you've tested with a full layer of frosting (might need to be thinner than usual) and then add an also full (yet thin) layer of ganache on the frosting (with a frosting dam around, of course)? I know you test your recipes lots and want to know before I make it if you've tried what I'm suggesting and perhaps concluded that it was too much? Somehow I'd be tempted to put full layers of both...
I have not tried making it that way, but you could certainly give it a shot if you'd like. I don't see any reason why it wouldn't work. :)
