I loved this video so much. I myself do not identify as a Korean (African-American) but I grew up in a Korean Neighborhood and this made me miss home. My close friend and his family would always invite me to make Kimchi with them during the winter and it was always a fun time 😊😊😊.

My dadi(Grandma) made these amazing pickles with unripe jackfruits and I still remember eating like 5 thick rotis with that pickle as a kid. My mother is not able to make that same recipe taste the same as my dadi's but I've been told my cooking is exactly like dadi's and I think my pickle tastes a lot like hers. Ughh still one of my best memories as a child were of going to the roof to toss the marinated pickle jar in the sun and get amazed by the smell.

I gotta say, I've been watching a LOT of Korean variety shows for the past 2+ years and it's always bugged me seeing them put the pork straight into the water when making Bossam. So seeing you not only brown it first (maillard reaction = flavor!!) but then brown it AGAIN after it's done for more caramelization?! You (and your mom) out here showing the world how to do it! You really love to see it.
Bossam shouldn’t be caramelized! Just like how sloppy joes or pulled pork shouldn’t be caramelized, 보쌈 texture should be soft and fall apart! The flavors come from the brine and the sides you eat it with!

In my experience meat is always better browned because the process adds flavor/complexity. Even with pulled pork you specifically use a process to create a bark (caramelize) on the outside of the pork. So yes it pulls apart but a boiled or sous vide'd pork butt would make a sad pulled pork.
BUT, I'm not Korean and if you're saying it's only boiled then I'm just left wondering if you're wrong or if she just makes it differently than the norm.

@@nathanp2007 Bossam meat is not meant to be eaten alone and is more about texture than flavor, so caramelization is unnecessary and definitely untraditional. Also different cultures have different preferences for flavor profiles, so saying caramelization is always preferrable is a bit of a misconception.
In Vietnam boiled pork is also prepared by simply boiling the pork in water or broth without any previous browning. It‘s supposed to taste „clean“ and not overpowering to act as the perfect vessel for your condiments and side dishes (like the kimchi in this recipe) while having a bouncy and collagen-rich mouthfeel. Of course there are other dishes where the meat is caramelised first (e.g for braised pork), but those are mainly dishes where the meat is the stand-alone focus of the meal. Different recipes require different techniques. You should try it the traditional way once. Another „unbrowned“ meat dish that I can really recommend is Hainanese chicken!

Reminds me of my Chinese mom asking me to take videos and pictures of her super long Chinese squash that she grows in our backyard (NJ, USA, so it could be better). I absolutely love kimchi, it's one of the first korean side dishes I love so much, cause I never liked greens, but realized that kimchi is cabbage and can be any other greens , sooo good

I never realized how in many asian cultures stocking and sharing food is valued. I think serving food for your family in bulk so it lasts long and being able to enjoy eating food and not wasting anything seasonally is something I'd love to do myself. Sinigang tastes just like kimchi stew... Except kimchi stew is a little spicy. I know this because I'm Korean and my wife is Filipina. Very similar flavors. Salty sour... Delicious

I'm a bit of a glutton when it comes to kimchi, and for the longest time I've wanted to sit in on kimjang so I can start doing it myself. So wonderful and wholesome to see that you fully appreciate your amazing family and watch you guys have a good time together. Your dad is an absolute gem, I'd definitely watch his plum syrup video!! Seems heaps similar to making umeshu, but without the alcohol. Anyway, awesome vid, keep doing what you do, you're an absolute star. PS.
