    Just a suggestion I just pressure canned soups, stews, chilis, and bolognese sauce. It becomes shelfstable and you can take it to the caravan with you in the future. If you don’t use it during the blizzards, I like having canned foods on my shelves for when power outages happen and then I don’t have to worry about feeding me or my family.

    Hi Karen, wishing you a Happy Birthday.
    I have been adding preps to my pantry ready for winter. A lot is canned (but not by me) and I have 2 small freezers full to the gunnels too.
    Since losing my sight I am using a lot of pre prepared/pre chopped foods.

    Because you can put them in and forget about them - no need to stand over them as they cook - and once they’re done you can freeze in whatever size portions you have / need. Personally, I’d slow cook a lot more than two bits of chicken or a packet of meatballs at a time, but doubtless it depends on what you’ve got available.

    I am working on emptying a freezer, made a delicious vegetable beef soup today, got some pork 'n beans on the go as well. Did a quick inventory and saw that we are low on canned beef stew, so in the next days, will remedy that as well. Many happy returns to the day (a very old Englishwoman used to say that to me, and I just loved that version of "happy birthday".)

    Dividing into single portions is good thinking,but thawed out frozen stuff can be refrozen. I've been doing it for 24 years,defrosting enough to chop one portion off,then refreezing the rest. A hefty meat cleaver helps. I've even dipped one end of a cheese block in hot water,cut off the softened end and back in the freezer with the rest.

    Happy birthday Karen!! I love my slow cooker and, rather than batch cook, I cook an extra portion each time and freeze that as a single serve meal. It helps if only one of us in for evening (main) meal.

    I hate those mandolin things.Made a mess of my finger once
    Slow cookers are great.Its warming up where I live and I even use them in summer during heatwaves to save heating up the kitchen

    I'm getting my pantry ready for winter too. I can and freeze large amounts of food. First on my list this year is veggie beef soup. I make it in a big graniteware water bath canner full. I can get around 50 pints of soup canned. I do the same with ham and bean soup. I bought a big upright freezer and make about 12 different meals. Usually about 10 portions per meal. The only thing left for me to dehydrate are lemons for water and tea. I already did spaghetti sauce, pizza sauce and taco mix. All of my meat and veggies are canned and ready. Cook once and eat for 2 years. But I live alone so I suppose it's easier to stock up. Guess who's a prepper. And guess which country is about to have a volatile election in a couple of weeks. And more talks of dock workers strike. Oh yeah, and guess who lives in a snow belt area. 🙋‍♀️

      Thank you! It's rather tense here right now on all fronts. So much of our food here is being recalled due to Listeria and E Coli with some Salmonella thrown in for good measure. Our food situation is very concerning. I just bought this house this month so I feel like I'm starting all over again at 72 yrs. old. But it was a good move closer to family.

      @@TheCornerLot-t8r congratulations on new home at 72. I've been working for a relocation from Florida to Michigan Northern Michigan. Where I am generational. So looking forward to getting out of the heat. Back to the great north. And so excited about it. I was back 11 years ago. To grab a bachelor of science degree from Central Michigan university. Where I had studied for my fine and applied arts degree bachelor's.
      I loved being back in the seasons. It felt so good. I felt better and younger. This extreme heat down here has really robbed the vitality in youth from my being. Mackinaw City village, Michigan.

      Thank you! It was a tough move for me as I'm older and alone. I moved from N. E. Ohio to N. W. Indiana. My Ohio house was destroyed by water pipes bursting in my house 2 winters ago while i was on Christmas vacation. Most of the house was down to the studs while they were looking for all the leaks. I spent over 13 months living in a hotel. I was ready to move. It was a two year fight. But I'm happy now.

    Get a shop once a week make do with what I have am not a great fan of freezing or preserving of anything just a few tins and sauces in the store cupboard oh yes and a couple of tins of toxic spam and tuna! thats it.

    I'm really fancying making some cream of vegetable and cream of chicken soups... I lost favour with all the big brands years ago, there's just something doesn't taste quite right with the tinned soups, so I fancy a go at my own... You can freeze soup down I believe too... I absolutely agree on single portion freeze downs... There's just me and my boy, there's been times I've defrosted a double portion, half of its ended up in the bin because I've saved mine for later and not used it x lol x

      @@catrinalumley6628 soup with cream is still healthy. I did the math my son's cream soups like lobster bisque. Or loaded baked potatoes. Loaded with protein as well as veggies. Good cream for omega-3. Coming in at only 630 to 670 Cal. Averaging 14 to 16 oz. An entire meal. Quite satisfying as compared to a couple thousand calories of a fast food meal. Or just grabbing junk out of the fridge and chowing down on it. I do absolutely love portion sizes. I always go less because we can always get more.

    I have started to dehydrate potato's and carrots as I keep hearing about their potentially rarity next year due to the bad harvest this year. ideal for dropping into a slow cooker stew

    We have a smoker for meat and veg. on our porch and are presently doing 30 lbs of chicken legs.
    Yesterday I cane home with 60 broccoli heads to dry down and freeze. very busy day. all the above were on a major sale.
    I couldn't grow the broccoli or the chickens for the prices. We should be all set for winter.
    enjoy your slow cooking. Winter will be here soon and you want snow. come to Ontario Canada.

      @@bobbiejo8747 HI THE SMOKER IN MY CASE DOESNT PRESERVE FOOD MORE LIKE SMOKED BACON BUT REALLY SMOKED NATURALLY. GREAT FLAVOUR WE ADD SOME GARLIC PWDR AND SPICES WHILE SMOKING. NOW WHEN I GO AND BRING IN THE MEAT. I LET IT COOL AND PUT IN ZIP LOCK BAGS. I CAN FIT 6 LEGS IN A LARGE BAG. THIS IS ENOUGH FOR MY FAMILY FOR 2 MEALS. IN MY FREEZER. I GUESS YOU COULD ALSO PRESSURE CANN THE SMOKED MEAT FOR LONGER STORAGE.
      MOST SMOKERS WE PURCHASE FROM REGULAR STORES ARE ONLY FOR SMOKE FLAVOUR NOT A PRESERVATIVE
      FOR PRESERVING I BELIEVE THEY USE A COLD SMOKE AND IT TAKES DAYS TO COMPLETE. THE PROCESS

    I can empathise about your finger as years ago I took a slice off one of mine and it couldn't even be stitched up at er. It was a terrible waste of all the apples I'd been chopping up.

Biblically the world will have to be preached about God and all four corners of the earth people like to ignore that. Hard times come and go the end of times are not here and won't come for thousands and thousands and thousands of years. So stop fear-mongering. Get to living and enjoying. And all of us are pretty much overweight to morbidly obese. We could all all live on a marginal amount of what we're shoving in our pie holes just saying it for all of us cuz it's true mostly for everyone. If you live in an industrialization Nation quit whining. Their people living in poverty eating a few bites if they even can off the land. Laughing if you're doing it sarcastically and others is evil. Laughter for the soul because God loves laughter laughing with each other not at others. We're coming into a new time where women of education and money management are going to start running the world little by little. These men all over the world have did nothing but cause war and chaos. It's time they are shelved and women step up to do right by the world. We have been since the beginning of time. And now we've got a little bit more of a rush on it since men really went to town and destroying the world lust n money. Get out of those two things running the world and we will be great.

      Oh my Lord the succulent meat, of the slow cooker. Of the Crock-Pot chicken. Oh my Lord you can pull that chicken out throwing a few tablespoons of flour you cut gravy. Oh Lord is it delicious. Meatballs oh man in the 70s we love making meatballs. Having them in our crock pots taking that Crock-Pot to somebody's house or right to our table and just yummy yum eating those babies right up. It's fun it's cheap.

      😮 you ignorant saying you she doesn't have a dime from them right now. She has been putting out for years. Caretaking and going above and beyond. When my friend realized I was doing what Karen was doing. The assisted living cost were outrageous. Karen cared for and took care of her mother in many ways. Long before her father passed away. Little snippets of their life. Of how she barely got any time to do anything for herself. As her mother needed her so very very much constantly. Her mother's money wow that's really nasty. Especially when she doesn't have that money now. Does not have access to it. It is wrapped up with the care homes. I am flabbergasted by your nasty.
