You could add a tiny bit of Xanthan Gum to avoid separating water and milk. It acts as an emulsifier and is a must have in my kitchen. I thicken up my protein shakes with it also. It has a lot of purposes.
@@Felu Sure, I hope that will change. I discovered this stuff a few weeks ago and for me this stuff is magical. Ice Cream does not crystalize with high water content, Protein Shakes can be transformed into a thick Mc Donalds Shake or even Pudding etc. And emulsifying is just another side advantage it has. It also helps to spare calories. I like semolina pudding (Grießbrei) and oatmeal pudding and I can almost cut half of the semolina and oats and still get a thick consistency, without adding cornstarch, which would also add calories and carbs. Also without any side flavours (xanthan gum has no perceptible flavour). Its really great.

for sweeteners, i like to use the "0 calories" sugar-free syrup (Torani brand). it's normally used to flavor and sweeten coffee. there are a ton of different flavors and it doesn't take a lot to blast the taste level up.
My favorite dessert currently is. 200g frozen berries (strawberries or blueberries) 200g 1.5% milk 40g Casein Whey. - Mix milk with Whey in protein shaker. - Add berries and mix again (remove grid from shaker before if necessary) - Puree everything to an ice cream with a hand blender awesome protein ice cream

I never had or heard of Panna Cotta, but I tried making it with 0% greek yoghurt and cashew milk only for the dairy and it was very dope. Can't imagine how good it would be with real cream or milk. Good call on the PB2 as topping, too.
Gelatin strength doesn’t depend on the country. I ended up with a rubbery panna cotta using 15 grams. Luckily I was so excited I tried it after leaving it in the fridge for an hour and it was sooo good!! I made a matcha flavored panna cotta 😋 It would be helpful to mention the bloom strength of your gelatin in the recipe!
At my grocery store they sell oatcream, which has half the calories of actual heavy cream. Pretty sure the taste will be different but will try it out regardless.

So, I only have to whisk it for more time? Another issue I had is the forming of fat bubbles in the surface. It was like the heavy cream and all its separated. How can I avoid that?

@@Felu I mean it's concoction only for liquid part, you will need jello still. But, also you can turn this into airy mousse if you increase gelatine quantity and wish it after some time in fridge. But I personally don't like that metod for Panna cotta.

You need to let it rest a bit more at room temp before refrigerating. Cooling the bowl in the fridge before adding everything in helps as well
