I really don't understand how people can give a thumbs down to a cake video! Especially this one!! You did an amazing job, it was gorgeous and I could almost smell the chocolate :D I'm adding this kind of cake to my to-do list!
So I made this amazing cake and it was a huge success. Such great instructions in the video! I went all maths-y and used the formula for area of base of tin to convert the suggested mud cake recipe (for a 7 inch round tin) to an 8 inch square tin. Turned out to need an increase by a factor of 1.66 (made a cake around 6cm tall). I made the second cake a little smaller (1.5 x mixture) and the cake was only slightly less tall (5.5cm). Anyway, I wasn't sure if I would like a milk choc mud cake (I'm a dark choc fan) but it was delicious. For the second cake I used a combination of milk and dark (had run out of milk choc) and it was great too. Excellent texture. The only issue I had with the cakes was that they had a lot of cracks in the top. This meant that when I was trimming the top domed portion of the cake they fell apart. To make the wedge shaped piece of cake that the basket "lid" rests on I had to use cake pieces but as it was all hidden under the lid it didn't matter. I also pre-cut a hole in the centre of the cardboard cake board so that I could easily drive the dowel through the lid and its board into the cake underneath. The basketweave piping took about 2 hours to do. I actually made slightly more blue icing than stated above and I did end up using it all. In contrast there was plenty of icing of the flower colours. I had plenty of leftovers so I later made heaps of extra flowers and froze them to use another time. I found I needed to freeze the flowers first before handling as they become soft very quickly at room temp after only being in the fridge. And they had to be placed very quickly and handled as little as possible. I do live in a subtropical climate though (+ no air-con), so that will have definitely been a factor. I've piped lots of Vanessa's flowers so they didn't take long once you get the hang of it. I actually found the dark pink ones (with the 102 tip) the hardest to do, possibly because I hadn't done them before. I think next time I will make a greater variety in the size of the flowers as I found I sometimes needed a bigger or smaller bloom for the space but didn't have the variety in size to choose from. Although time consuming it was a spectacular success. One very happy sister-in-law on her very special birthday! Thank you Vanessa for yet another incredible video of an incredible cake.
