Great idea and design! I am pretty sure there should be a minimum height requirement to use the burners 😂. There's no way I'd be able to reach the burners let alone lift a pot over a hot griddle.
Suggestion for him: sunsetter makes a freestanding awning that I'm sure he could fabricate to mount in the middle then he would have awnings on both sides.
What about a built in area for a can opener, bottle cap remover, and blender. Could you install a mini stove for baking on one side instead of two griddles?

She started working for her aunt, as she grew older started her own catering business. This Rig would be awesome for outside catering gigs. I’m trying to compile a list of some resources as I’m attempting to get into the camping/outdoor scene before I get any older as I’d love to get my ass back out into the grass. This is really nifty. I would only need half for a kitchen and the other for camping gear. Just some constructive criticism, I would figure out a way to get the propane tank into its own compartment away from the battery and other electrical just incase the connection to the regulator develops a leak as they do wear out. Little to close for my comfort. I'm a truck driver and I personally have had an inverter cook on me and it was mounted under the bunk where I had two small green bottles of propane for my cook top. Outside of that, outstanding job.

This is truly wonderful. I have friends who love their football team and tailgating. This would be ideal. Is there a way to add a refrigerator, instead of using coolers? That's the only thing that I see that my friends would want.
Could probably add a 12volt fridge cooler to one of the back ends. Not sure if you’d have to add another battery though but looks like there is enough space for one.
