- This truly was the perfect Turkey Recipe. The Pit Barrel Cooker ROCKED this Orange Spice Turkey I started this recipe out with an orange spice brine and finished with a glaze. Orange Spice Brine:
24 oz bitter orange juice
52 oz orange juice
50 oz ginger beer
1/2 cup kosher salt
2 spriggs each rosemary, thyme & sage
2 sticks cinnamon
1/4 cup pickling spice
4 cloves chopped garlic
1 orange, slice
1 tsp Chinese Five Spice
2 bags orange spice tea
Orange Spice Glaze:
1cup honey
1/4 cup melted pork lard
1 teaspoon pickling spice
Zest of 1 orange
1 teaspoon orange spice tea
1 teaspoon salt
1 teaspoon apple cider vinegar
1/2 teaspoon black pepper
1/2 teaspoon Chinese Five Spice
1/2 cup ketchup

It seems to me that you would want to hang the turkey the opposite way since the breast has a tendency to dry out faster than the thigh area because of being closest to the coals.

I just bought my PBC yesterday. Great video, but I have a question. Would it make any difference to hang the bird the other way (dark meat toward) the coals? Less chance of overcooking / drying out the white meat?

I can't wait to smoke my first turkey this year in my PBC! The only thing I am worried about is the cook time. It is supposed to be in the teens for a high. Hopefully it cooks well.

Nice one Greg, turkey is one of my favorites to experiment with, after the big day I always buy three or four on sale for the smoker throughout the year. Going to attempt to smoke a deboned whole turkey this year.

No, you could just use salt and water, but I was going for more citrus/spiced flavor throughout.

I was excited until I was disappointed when the plastic doohickey was left in to cook...
