Good looking turkey! I have been waiting for a wireless thermometer that can measure food and ambient temp simultaneously. Just ordered one using your link. Hopefully you get credit. I will report back on how I like the thermometer.

We remove the dark meat and just smoke the breast, then roast the dark meat in the oven for the gravy. Love smoked turkey but have to have the gravy.

I'm confused. The turkey looks great but you said the thighs were at 168 and 164. USDA says turkey thighs are safely cooked at 165. Just curious on the reason you're going higher than that. Thanks for any info in advance.

170+ is ideal for thighs to maximize the tenderness of the dark meat
