I'm not a big meat person, but I remember my mom boiling cow tongue and then slicing it wafer thin for her sandwich..She loved it. She was raised on a farm early 1900's.
I absolutely adore the fact that you know where and how your food is grown and processed. I am impressed that you buy local (I too like to support our local farmers). Really enjoyed this!
Having three freezers is essential for people who are growing their own food or buying in bulk. I bought a large catering freezer and it's great to have the freedom of knowing that if I make stuff or have extras, that I have room.
I love the house tour.... neat laundry room, clothes folded and a mask hanging in the garage for the dogs (LOL)!!! You are so organized and neat. Love it. I so loved this video ALOT. thank you.
Chest freezers last a lifetime in my experience. My grandparents have to replace their stand up freezer every couple of years but I’ve had my chest freezer for over a decade now 😍 It’s survived moves and everything.
Our stand up freezer has lasted longer than that. We have a temp sensor hooked to a cell phone alert so we know if the temp starts rising...good thing because the door doesnt always close right. I love our chest freezers but hubby thinks they're hard to find things in so I individual freezer meals, frozen veggies, and hunks of meat rotated into our upright so he's more willing to throw something into the Instant Pot or microwave as it's easy to find.
When I have too many cherry tomatoes I lay them out on baking sheet and splash with a little olive oil and seasonings and roast until soft and caramelized. I freeze them in small baggies and use with pasta, eggs. pizza, lots of things.
I do a very similar thing with the peppers. When I package them for the freezer though, I put them in snack size bags and then put those snack bags in the gallon bag. This allows me to only pull a small portion out to thaw and use rather than having to break off or thaw out a whole block. Great job on the food processing! I wish I had been that organized and productive at your age :)
I chop up peppers, spread them on a cookie sheet in the freezer to firm up, then put them in a gallon bag. I use them in my daily 8 vegetable salad and they taste great. I do this with anything I don't want to clump into a frozen mass, berries, roasted cherry tomatoes etc..
I've used the snack bags (u can get reusable ones) specifically for roasted hot peppers and then add them all to a gallon freezer bag. Pull one out when needed. I also use the tray method for freezing berries then adding frozen berries to quart ziplock. I will rinse and reuse the berry bags. Freeze meatballs the same way, but I don't reuse those bags.
If you want to maintain the crunch of bell peppers, just cook them from frozen. I dice up 3 different colors with spring onions & red onions and freeze them. I like to add it to my eggs in the morning & still enjoy the crunch up to 3 months. They’ve never lasted beyond that time so I don’t know if the texture changes further down the road.
Becky, in Texas we slow cook cow tongue and make barbacoa. You add 1/4 cup of water just for the steam, s&p the tongue and wrap in foil. Slow cook it overnight and simply remove the skin and shred the meat. serve it in corn tortillas with pico de gallo.
I really love your videos! I overthink things a lot and get so overwhelmed. You make it look like, “it’s okay! Just do it!” I wish I could work as quick as you. Haha! Lots of good information.
I grow peppers in Canada. I start them on a heat mat in a warm room (65- 85°) , in March. In your area, I would recommend planting them out in the garden, after they have been hardened off for a week. Usually they have 6 to 8 mature leaves when they are ready to plant out. I companion plant to keep them healthy. Good luck. I love almond milk. Brightest Blessings
Edward Zarnowski, my apologies if the term almond 'milk' bothers you. It is only referred to as a ' milk because it is a substitute for mammals milk, which we should not be drinking anyway, and it does look sort of milk-like.
When we buy a lot of meat or process a deer we put the meat in a freezer bag and then wrap it in either freezer paper or jumbo brown lunch bags. Helps keep it from freezer burn.
Cow tongue is delicious! I remember my grandmother boiling it in well-seasoned water. When cooked through, you let it cool and peel off the thick outer skin. Then she just sliced the tongue into slices, crosswise. She made sandwiches with hers
I’m going to second the comment from Leslie. Tongue is so delicious, please try it. We make it the same way. You can eat it hot with boiled potatoes or later cold cut on bread. Both ways are good with some horse radish. Greetings from Germany! Susann
i just love your show and you are my hero...I am a bit older and had given up on canning and freezing and you have inspired me. I am going to watch all of your episodes!!! I am now going to go back to freezing in the fall and canning again. Thank you!!!
Beef tounge is my favorite. It has been so difficult to get a hold of for me this year. I really hope I can find at least one for christmas. Please try it, before you feed it to your chickens (or dogs). You can eat it for dinner, or just slice it really thin and use it in a sandwich.
You can pressure cook the tongue, peel it, slice it thinly and then cook the slices in some spiced butter in a pan (thyme, crushed garlic, red and black pepper, whatever you like). It goes very well with red wine :)
Beef tongue tacos are amazing and a great way to try tongue for the first time. Thaw, then cook for a few hours in the crock pot with water and spices. Peel the taste buds off and shred the meat. Then warm the meat with all your favorite seasonings.
Cow tongue is delicious! I wasn't sure neither first time. But if you cook it for few hours, and then peel the skin is just like normal beef meat. I cooked with bay leaves, cinnamon, salt, pepper and a whole onion. And then I will make a sauce, or used for tacos, rice bowls... etc.
My father in law makes beef tongue by slow cooking it in water in the crock pot. After it comes out the outer layer of skin needs peeled off. It looks a bit funky while the good meat is tender and delicious. Tried it for the first time when my husband and I visited in April, and I loved it.
Cow tongue is excellant. Cook, peel, slice to sandwiches, add a little mustard, yum. Or, peel, use like a roast, very good! I don't have any luck freezing potatoes.
Omg cow tongue is delicious! Season with salt. Cook it in your crock pot over night with 1 tbsp of chopped garlic. Delicious with corn tortillas and salsa. Your husband wouldn’t even think it is cow
This lady is right. It is highly likely a power outage is iminent, given the political climate and severe drought. CA power lines burned to a crisp last year and half the state was literally without power in some cases, for weeks.
I might add an alarm to mine. I accidentally did not shut the door of my freezer tight (I'm thinking something on top was in the way and I didn't realize it) and it was open overnight. Everything thawed, but luckily I caught it in time to preserve several things (frozen chicken breast I canned, frozen hamburger I fried and refroze, and we ate the steaks with friends) I lost 2 1/2 bags of food though.
Those chest freezers keep child air in since cold air sinks. I'm from an area that would lose power a few weeks every winter and the chest freezers don't need generators to work! :)

Just learned last night that zucchini can be shreaded and dehydrated than powdered for a type of flour to add to breads and muffins if you have a lot of extra zuch to figure out a way to store it.
Soup bones are great for beef and gravy over rice or egg noodles too. We almost never use ours for soup, we cook them down and make pulled beef sandwiches or beef and gravy.
We use beef stock in our spaghetti sauce (and in any stew I make, if the recipe calls for water, I use stock), and I also use beef or chicken stock in my sweet and sour sauce.
You would really find a dehydrator helpful. Dehydrate the peppers. Your chickens would eat a the dehydrated kale and greens you could make through the winter.
WOW! What a blessing to get all those canning jars for free! I don't do a lot of what you do as far as buying in bulk but what I DO do is make pot pies for the freezer often. Turkey, chicken and beef. I make my own broth and make some freezer meals by cooking extra and making one for the freezer. I used to bring my dad food often. He passed away last year and I've kind of stopped cooking so much. Lost my desire or something. I've been watching you for a couple days now while I cross stitch and have been thinking and planning on getting back to it and to try some of your tips and tricks. Also, my husband works at a grocery store so he shops for something on most days. He finds lots of deals and marked down things and I NEVER have to shop. I like your channel.
The soup bones could be used the make beef broth. All of the vegie parts could be used to make veggie broth. Same for chicken pieces you would normally throw out. Just boil with salt and pepper for a few hours and you have broth!!
I had two turkeys in my freezer and I thawed them and roasted them both at the same time in an electric roaster. I sliced them and froze them in small portions covered in gravy and we have been enjoying them. I also put the carcasses right back into the roaster, covered with water and cooked them for 24 hours and canned the nice broth. I can chicken breasts and beef chunks about every three months. Cutting meat off the bone to can is not super fun.
cow tongue is good meat for tacos too! my favorite way is steamed for a long while shred add raw onions cilantro lime squeeze on a warm yellow corn tortilla
New subscriber here! You can cook that beef tongue in a crockpot. Season with salt and pepper, garlic add a couple of cups of water or chicken or beef stock. Add an onion. Just cook it overnight. In the morning take off the outer skin. Chop the beef or use a couple of forks to separate the beef. Season to taste, make a Pico salsa with corn tortillas. These will be some great beef tacos! Rich and delish! I hope you will try it!
Freezer goals! I want to get a stand up fridge freezer too for freezer meals, working on getting a generator first to power the freezers before I add more since we're hurricane country. We lost a huge freezer stash during hurricane Michael and I will never let that happen again!
You have to try beef tongue tacos. Cut the tongue into about 6 pieces, cook in pot with water, orange slices, bay leaf, black pepper, oregano, salt for an hour. Remove the skin of the tongue, then return meat back to pot and cook until it sheds like pulled pork. Yum
Cows tongue is possibly one of my favourite Deli type meats. It looks like you may have to skin that tongue though. Male a slit along the length and using a pair of pliers pull the “skin” (outer membrane) away from the meat. To cook roll up the tongue and put it in a pan that is a tight fit cover it with water and bake in the oven for an hour or two (it really depends on the size. When cooked drain off and keep the liquid and put the tongue back in the pot it was cooked in. Put a saucer on top of the tongue and place some weights on top so that the tongue is compressed leave in the fridge at least overnight. You can add the. Cooking liquor over the tongue if you like this becomes a jelly when cold. It’s really worth giving it a try. All the best to you and yours from Scotland. Rab
Here n Tx. Beef Tongue Tacos r $2.00 r more. Cook it nthe crockpot, when done, peel the outer tuff layer &eat the nside meat. Slice &dice the tuff outer layer ofthe tongue &give it 2ur dogs. Save the Beefy Broth &boil beans.
With just a dab of any cooking oil ( even pam) you can stop the squeaking on your door hinges- spray or rub it in the hinges and move the door back and forth until it stops squeaking 😊 loooove the freezer tour!
I preserve my celery the same way you do your peppers. I tend to chop up a bunch of celery, use what I need for that day. And then put the rest in the freezer. It freezes well and is great to use in Chili's and stews in the future.
Our garden is crazy but god has blessed use us this year tons of peppers. Tons of paste tomatoes ever try jet star o my gosh so good huge but sweet.i got a dehydrator this year. Love it.i grew a ton on borage. Tons ofred amaranth and 350 ears of sweet corn so good. We till a small garden and it growing wilf watermelon squash.okra cucumbers and canteloupe. .also we have chickend. I put up 2 elderberry an 2 blueberry bush.
If you find lamb too gamey, I reccomend you try eating it cold from the fridge. I feel the same when I try to eat it hot but is so good on a sandwich or even a cutlet straight from the fridge.
Cow tongue is good . Put it in a crockpot on low overnight with a tiny bit of water, salt, black pepper. Drain in the morning. Peel skin off and chop it up. Make tacos with corn tortillas some salsa cilantro and onion .. yummy
New subscriber here and I concur with Marie Parks... it is awesome to see a young individual take charge of food production and how you use it all be it you and your husband, the chickens and gifting... Blessing to you and your husband and what a bonus to be gifted those canning supplies. Continued success.
I have the same bag of pecans in my freezer. I could eat soup everyday! Tongue is delicious but you need to boil it to be able to peel it you've got to take the outer layer off. It makes great sandwiches sliced thin. I lived in the UK so we ate beef tongue and ox tongue which was called lunch and tongue. It's really good and you could look for recipes for New York deli sandwiches because they you make a lot of tongues sandwiches. I grew up on leg of lamb and it was made every year for my brother's birthday as well. I love it! I have lived around the world in eight countries and expanded my palate and my mind greatly. :-)
Beef tongue is really good. It is like pot roast. Unfortunately, I have never cooked it myself. Worth looking into. The Russian lady that made it prepared it for a Christmas get together and she considered it a delicacy.
Cow’s tongue is yummy. It tastes like tender beef. Being German we normally eat it with horseradish on the side. Makes great cold tongue sandwiches, too.
Beef tongue is very expensive. You can cook the beef tongue in the pressure cooker. Remove the skin after it's done and it's all meat. You can make corn tortilla tacos and add pico de gallo, it's very good. In Mexican cooking we really enjoy that part because it's all meat.
Cow tongue is a delicacy in France… my mom always put it in the pressure cooker then peeled the skin and some times we had sandwiches or a meat for dinner if she had 2 or 3… yummy love you show❤️
Grew up on a 10 acre farm of which 1 acre was garden. I’m in my 60’s now. The YELLOW squash is SUMMER squash and the GREEN squash is ZUCCHINI. Just an FYI. You’re doing GREAT and I’m impressed as to how much you’re putting away and your beautiful heart to want to help others should there be a need in their life. You’re an inspiration to others to grow their own food.....even their own back yard as long as there is no covenant against it in urban settings. Stay blessed and healthy !!! Hugs, Deb
Yes just boil the tongue until it is soft . If you poke It with a fork and it is like poking a baked potato. Peel skin off , slice . I saute it with tomatoes, bell peppers and onions in a frying pan on the stove top only about 15 minutes.
My aunt makes beef tongue and it is a favourite with some members of the family. I used to enjoy it before I went vegetarian. She pickles it first then cooks it
Beef tongue is amazing!! Thaw it, score the skin. I make a big X at the tip and score the rest. I put in crock pot with beef stock, garlic, onion, salt and pepper, tomatoes. If I plan to do lengua tacos, I add cumin, coriander, chili powder. Cook 8 to 10 hours on low. Pull out the tongue and peel off skin. Dice or slice and pop back in slow cooker. You can also do just like pot roast. My kids ask for it, now!!
Woohaaaa! All those jars! Great idea to can your meat… frees up freezer space big time and reduces meal prep time… which is something I see you strive for…. Love your energy!!! Young and smart and aware…
Have you ever though about a vacuum sealer? I got one last year and love it, no freezer burn. I have 3 big freezer also and it is only myhusband and me. We also have chicken and milking goats. Love watching you, you are so much like me, just a lot younger.
Yes I should probably get one just hadn’t wanted to spend the money. I would love a dairy animal just can’t manage that here but maybe some day :) thanks so much
Hi.. love your channel. It is my husband and myself and folks think that I am crazy that I preserve so much food and use my freezers. I just purchased an Avid Armour chamber vacuum sealer. What a game changer….the vaccum chamber sure has made my job easier. Continue to post great content.
I grew up on a farm & we ate cow tongue, when dad butchered. When he'd butcher a hog they'd cut the fat & skin off & fry it up, that was cracklin & so delicious. Down here in La. we always smoked our sausage, & mom loved hog head cheese. We cooked with the fat from the hog, which is called lard. We lived off the land & the garden & orchard as much as we could. 💜
I love this! I have two small freezers, 1 upright and 1chest freezer. Last year I learned that eggs can be frozen! When thawed they are good for baking and scrambled eggs The yoke is different but they work fine. I freeze them in cupcake papers and toss them into gallon Ziplocks.
Hey! New in to the channel. Solution for the potatoes: pre cook them (cut them and boil or fry them until they are almost cooked), let them dry and after that you can freeze them. Mashed potatoes freeze perfectly as it is.
Yes, mashed potatoes are sooooo easy to freeze, I just scoop them onto a baking tray (as many as possible in a single layer) and then slip the tray into freezer and open freeze them……. once frozen I put them into plastic bags, ready for when I want them. I remember coming in from night duty and just taking out a lovely big frozen casserole and a bag of mashed potatoes….. hey presto dinner was ready. It’s worth all the extra work.
You will love it! I have been canning meat for years!! Beef in wine sauce, or chicken soup with rice are our favorites! Also, I make my own dog food - 1 jar chicken and 1 jar rice and veggies. 4 dogs, 2 pitbulls, 2 Chihuahuas. So, lots of chicken! I have a pressure canner that does 18 quarts at once! Love it! Have fun with the meats! Add fresh produce for flavorings. Can open a jar and put it over pasta! Awesomeness!!
Its just me and hubby so one year i only had a young small turkey , boy oh boy was it goood, tasted better than any turkey we had, and the drumsticks were like 🐔 drumsticks in that they were tender and did not have those long stems/ tendents .
If and when you can the turkeys.. prepare just like thanksgiving..season it etc..and than can with a clean clear water 💦, this will give you the best flavour! Also, I can in 750 ml jars, or pint +1/2 size for two adults for dinner..mix your white and dark meat in the jar, add a slice of the seasoned skin also and can with hot water…the best pressure canned turkey! ( don’t add chicken stock.. it makes the turkey taste more like chicken IMO. Use the spices you use for your turkey if you wanna add more flavour in the jar. For preparation I drain and lay on a pan, cover with foil and heat up in oven. So so good!
Steam the cow tongue. That’s how my mom has been cooking it all my life. She steams it through the night and then chops up the meat. It’s so tender and juicy.
Beef tongue is delicious, you can boil it first then remove the skin because it's tough and shredded the meat. Use it with a green sauce, tacos or what ever you want.
You can dry freeze the raw liver, like the eggs you did in one of your videos. You can use a 1/4 teaspoon of the liver powder in your smoothie or even give it to your dogs with their meal. Has a lot of vitamins, I do buy it for my old dog and she love it.

Omg the cow tongue is one of my family favorites it's so expensive in California so I don't buy often we make in tacos or in salsa Verde with rice and refried beans
The tongue (Lengua in Spanish) is actually really good. Wash it really well. Put in crockpot with 1-2 in water and whatever spices you like. It is ready when the outside skin easily pulls away from the meat. I just use a fork. The meat texture is moist and lean
Please, please, please try the beef tongue. I guarantee you will like it. Once you pressure it, let it cool just enough to peel the skin off. You can slice it like roast, so good. If it's the look of it, once you skin and slice it you can't tell it from roast. It is so much more tender than any roast you ever had. Be adventurous!
I can chicken and turkey alot. I cook the meat by roasting or boiling. Take it off the bone and do what you did with the pintos. When you find a sale or free it's great to replace cans of chicken in casseroles.

It does have an unmistakable texture though! It definitely tastes like beef and is quite wonderful when prepared well.

Just learned last night that zucchini can be shreaded and dehydrated than powdered for a type of flour to add to breads and muffins if you have a lot of extra zuch to figure out a way to store it.
Great tip!
Soup bones are great for beef and gravy over rice or egg noodles too. We almost never use ours for soup, we cook them down and make pulled beef sandwiches or beef and gravy.
I always make broth to make gravys from roux, no Instant broth for me!
I like how you have similar items together in boxes! Nice way to organize and move around in there!
I love my dehydrator! I want a second one :)
I'm sorry for your loss. Frozen pot pies sound yummy for the fall!!
You are so organized.. I love it!!!!
And what gift could be more appreciated than jars👍👍👍💜
👵🏻👩🌾❣️
The million dollar question is how do you eliminate freezer burn!? Definitely happy to hear your ideas.
For lamb, I marinate it in pesto. Then bake or grill. So good and hides the gamey taste a bit.
Time for your side by side from spring to now, post harvest...
Yes, I watched this again just because😄
The soup bones could be used the make beef broth.
U are good working with food to go in the freezer. Thanks
I'm going to! I'm going to make tacos and do a live and try it! I'm scared....
@@AcreHomestead You'll be ok. I hope you like them.
PS. I like it with corn tortillas the best.
Freezer goals! I want to get a stand up fridge freezer too for freezer meals, working on getting a generator first to power the freezers before I add more since we're hurricane country. We lost a huge freezer stash during hurricane Michael and I will never let that happen again!
Thanks! Sorry about that :( THey can be hard time find these days
With 110 temp right now
What came to mind is Having a generator for power outages
It would be sad and expensive to lose all that great work done
We need to look into one!!
Rab
I just started watching your channel today. God bless you.....your channel will help so many, including me! Totally hooked!
Here n Tx. Beef Tongue Tacos r $2.00 r more. Cook it nthe crockpot, when done, peel the outer tuff layer &eat the nside meat. Slice &dice the tuff outer layer ofthe tongue &give it 2ur dogs. Save the Beefy Broth &boil beans.
Great idea!
Thanks for that!
I recommend using the cow younger in tacos. Cow tongue tacos are the best.
Thanks and welcome. :)
Great video! Woo Hoo! Free jars and lids!
Cow tongue is a delicacy in France… my mom always put it in the pressure cooker then peeled the skin and some times we had sandwiches or a meat for dinner if she had 2 or 3… yummy love you show❤️
Cow tongue it’s sooooo good! I dont know how to cook it, but in colombia we eat it somewhat regularly, it’s buttery smooth!
Hugs, Deb
Thanks, Deb!
Yes just boil the tongue until it is soft . If you poke
It with a fork and it is like poking a baked potato.
Peel skin off , slice . I saute it with tomatoes, bell peppers and onions in a frying pan on the stove top only about 15 minutes.
Wow thanks! I will try it…
My aunt makes beef tongue and it is a favourite with some members of the family.
I'm going to cook it! I'm scared tho....Thanks for the recipe!!
You can also shred it if you cook it long enough. It's so good! Just make sure you add a little water to it so it doesn't get tough
Back bacon is also a great cut. Think tenderloin with side attached
I would love a dairy animal just can’t manage that here but maybe some day :) thanks so much
You have the best channel, happy i found you.
Wow, thanks! That is so sweet to say!
I agree!😎
It really surprised me that Josh did not like soups. He seems to eat a wide variety of food. And soup is so versatile.
Great job young lady. You are truly an inspiration
The dogs would love the beef tongue ☺🕊🧡🐶🐶🧡🕊
Hi.. love your channel. It is my husband and myself and folks think that I am crazy that I preserve so much food and use my freezers. I just purchased an Avid Armour chamber vacuum sealer. What a game changer….the vaccum chamber sure has made my job easier. Continue to post great content.
Just love your videos! You really stay busy !! Lucky you to receive such a wonderful gift, all those jars! Yes indeed that was a blessing!!
Thank you so much! I am so happy to have them! I always need more jars!
When thawed they are good for baking and scrambled eggs
The yoke is different but they work fine. I freeze them in cupcake papers and toss them into gallon Ziplocks.
Thanks!!
Hey! New in to the channel. Solution for the potatoes: pre cook them (cut them and boil or fry them until they are almost cooked), let them dry and after that you can freeze them. Mashed potatoes freeze perfectly as it is.
Wow Romina That is so helpful!!
@@AcreHomestead BTW, thin sliced blanched potatoes dehydrate beautifully for scalloped potatoes. I’m going to try to dehydrate diced potatoes this fall.
I make Turkey meatballs I can in chicken broth make gravy pour over rice or pasta also soup and sandwiches with cranberry sauce
You are going to love having canned meats! It's a total game changer for quick meals. You can also do some meal in a jar type recipes for busy nights.
I can't wait to try it! I just need to find the time!
Would love to see that
You will love it!
So so good!
Perfect! thanks for the tips! :)
Steam the cow tongue. That’s how my mom has been cooking it all my life. She steams it through the night and then chops up the meat. It’s so tender and juicy.
Thank you for the video. I Can learn for myself how to prepare for the year ahead or for harder times, like last year.🤗♥️
You are welcome :)
Seeing all the stuff you have in your freezer makes me want to go out and buy a freezer. Lol....love your channel!!!!
Thanks so much! You would love a freezee!
A Food Saver machine and bags will help keep those meats and veggies longer. Great job on keeping stocked. Nice friend to donate!
My favorite

Great job Becky!
Omg the cow tongue is one of my family favorites it's so expensive in California so I don't buy often we make in tacos or in salsa Verde with rice and refried beans
Awesome! I'm excited to try it. :)
Great videos, your home is beautiful, and I love your energy. Makes me want to get up and do stuff, thnx!!!
All those canning jars😲😲😲 what a blessing!
When you find a sale or free it's great to replace cans of chicken in casseroles.
great idea. thank you.
