How Jeni's Splendid Ice Cream Is Taking Over One Scoop At A Time

- Jeni Britton Bauer started Jeni's Splendid Ice Cream in a small stall in Columbus nearly 25 years ago. Today, Jeni's Splendid Ice Cream has 36 scoop shops around the country and sells 2 million pints of ice cream annually.
After nearly 25 years in the business, making and selling ice cream has been hardwired into her very essence. And that's due, in part, to her upbringing. "I grew up loving ice cream because I'm from the Midwest," Britton Bauer, tells CNBC Make It.
"We don't even think of ice cream as dessert here," she says, adding that it's practically its own food group. Certainly something that you eat every day. Just like drinking coffee in the morning is a sacred ritual, so is enjoying ice cream in the evening. And Britton Bauer's journey toward building a thriving ice cream business started early in life.
Britton Bauer vividly recalls the moment her grandmother put her on the path to becoming an ice cream entrepreneur at just 10 years old. "She was standing in the kitchen stirring a pot, and she stopped me in my tracks and said: 'Jeni, you're so lucky because you can be whatever you want to be. You can be a doctor, lawyer, an astronaut. It wasn't like that for me.'" At the time, Britton Bauer simply responded with a "Thanks, Grandma," and darted off.
"But I remember, when I when I ran outside - in that moment - I thought, Well if that's true then I'll be an ice cream maker," she recalls. "Ice cream has always been a part of my life, and I think it was meant to be."
Even if Britton Bauer was destined to create ice cream - and selling a stunning 2 million pints last year alone suggests she was - that doesn't mean building her business from the ground up was easy.
Seven years before Britton Bauer started her own business, she got her first taste of the industry when she took a job at a local ice cream parlor when she was just 15. "I loved it," Britton Bauer says of that first job. Yes, her arms hurt and she got blisters from scooping. "I had to wear gloves the first few weeks," she says. "To this day my right arm is bigger than my left arm, and it all started back then."
The part-time job did more than just introduce Britton Bauer to the ice cream business, it acquainted her with the concept of service. "I felt like I could put all of my nervous energy aside and put all of my focus on someone else," she says. "I really believe that's why I make ice cream now. The way that I approach everything in my life is from that point of view of service, because it's where I feel absolutely comfortable."
It was while she was attending Ohio State University as an art major that she had an epiphany that would officially lead her down the path to starting her own business: Scent is a vital component of ice cream. "Scent and flavor sort of blooms in ice cream," she says. Once she realized that, she became obsessed with making ice cream at home, blending together essential oils like rose and cayenne with a vanilla or chocolate base.
She eventually quit art school - just walked out of art class one day - and started a small shop called Scream Ice Cream in Columbus' North Market in 1996. Britton Bauer spent each day learning on the job, working out of a tiny freezer to create flavors that combined ingredients from other local vendors in the market.
One of the first flavors Britton Bauer offered was a salty caramel. She had mastered the art of caramel making while working in a French bakery. And it proved to be a winning recipe for her. "People would drive in from the surrounding states to get it," she says. But the popularity of one flavor did not turn Scream Ice Cream into an instant business success.

Wow I just check that video out and you can actually see how genuine she is toward ice-cream and so real and so sophisticated. I'm not even going to question if her ice-cream is good or not. When you did something with love and passion, it's going to be great! Love her character too!!

its not worth ma dude, for some reason the ice cream dsnt taste the same as in the store. They probably use a cheaper recipe for distribution and maybe to force you to come the shop. If you wanna buy online u should probably go for another brand

Bruce Angel it’s cheaper at Whole Foods, in Silver Springs, MD it’s about $8.99 a pint. Yes, it’s pricy.
Just an FYI, Jeni's pints in stores are not $12, more like $7-9. Totally worth it for the biscuit and peach jam flavor. totally awesome.

You're missing out! It's the best chain store on the market in the US. When you get a chance, try Brown Butter Almond Brittle first. Seems to be a top seller. Also if you go to a store instead of buying it in the grocery store, you get to sample everything... and it tastes better too I feel like.

In a way, it is an ad. A lot of people are ok paying more for good quality, locally and ethically sourced and that'll be one of her major market segments.

I think they are $12 if you buy them online (and you have to buy at least 3 pints) to compensate for the likely more expensive way they have to package the pints to stay cold during shipping. If you buy them at Whole Foods or elsewhere in person, they are a little less (like $9). Right now, WF is selling these for even less than that for Prime members, under 6 bucks. I do agree with you though! *runs out to WF to buy Jeni's Ice Cream*

They have two of her ice cream shops where I live they ate both 40 minutes away from me on each side. OMG they are worth the drive though. It's amazing ice cream and she has the best ice cream cones. She deserves all the recognition that her products get.

I've tried many ice cream shops across major cities in the US and Jeni's ranks #1 for me.
She does not need to scale up! In the age of perpetual growth, Jeni’s Ice Cream stands tall and part from the rest because she keeps her ice scream within that “PERSONAL” experience in terms of vendor relationships, sourcing and production. Certain things need to remain as is. The moment she compromise principles which made her ice scream such a success is when Jeni’s ice cream will stop being Jeni’s. We have too many shitty ice creams. Just look at the grocery isle.
She already did scale up, they outsourced production to a third party
That's why a lot of French ice-cream/ chocolate/ bakery shops refuse to expand beyond France, some even beyond Paris.

Been buying Jeni’s since 2001!! Columbus Ohio, my aunt lived in New Albany and when these became available to buy online let me just say I bought a small deep freezer! Slowly, since I’m in Ohio I noticed first small, boutique type grocers carrying a small selection then the past couple years WHAM-O, it’s EVERYWHERE 🙏🏻❤️🙏🏻
So genuinely happy for her success, this is an amazing product and her passion has persevered and we all benefit from it.

Love her stuff, but the quality has taken a hit since she started to mass produce her product. Her stuff is still well beyond most brands, but Salt&Straw is the current top notch ice cream out there right now.

I used to walk by Salt and Straw all the time when I lived in Portland and I never actually got anything and I will hate myself forever
The flavors have definitely gotten more conventional as their market expanded. Now, they'll usually have only one really weird one, just to maintain their reputation for being "daring", but that weird one is usually not available, and all the rest of the flavors are typical fruit/ caramel/ cake type flavors.

I'd don't get Jeni's ice cream all the time, it's pricy. But oh goodness is it worth it when I do! The SO often gets me the Rose when I'm sick from the chronic illness flares and having trouble eating. The tartness and lightness is perfect for nausea, and the bright, sweet flavors perk me up when I'm struggling to eat. So wonderful! For sure worth it from time to time as a treat!

her darkest chocolate ice cream is on another level. all the work she put into it truly paid off. it is such a specific and amazing flavor. I've never tasted a chocolate ice cream quite like it. yes, Jeni's ice cream is pricey, I can't always afford to get it, but when I do get it, I never regret how much it costs, because it truly is that good. it is the best of the best.
Jeni's right -- the flavour of ice cream really does reflect one's personality! I for one love the combination of bitter lemon with sour cherries, topped off with those brittle, nutty and fragile flakes. Has an acidic aftertaste too.

Jeni's ice cream came across my radar about a month ago when I was driving across the country. I stopped at an outdoor shopping area in Columbus Ohio on the way back to Massachusetts and there was a huge line outside her shop (or one of her shops). Long line = great ice cream, so had to try! Wildberry lavender was outstanding and worth the wait. Since then I have bought some at Whole Foods, though the flavors have been limited and I've thought about getting some shipped to me. It wasn't until this video that I realized I watched her taste ice creams on epicurious!

Wow I had no idea she has been making her ice cream this long. I just tried it a few months ago because it was in the freezer at the gas station here in ATX. The dark chocolate is my favorite!!! It’s pricey, but it taste expensive haha ! She seems like a nice lady, I’m glad to pay $4-5 for a little on the go ice cream 😎
