I wonder if the higher speed of production won't make the wool still profitable? I really like the idea of being able to tailor your farm to center around 1 animal with 10 pens of that same one, but it would be nice if you could profit off that...but you also don't want it to be too easy once you have the maximum number of sheep.

I think they will still be profitable - you will just have to deliver more often. To be honest, I kinda like that. More interactive

Can you setup a multiplayer farm that 2 or more people can play on at different times? Does the dedicated server app help w/that?

Yes - the dedicated server can be run 24/7 AND you can set it to run only when people are on, so it won't kill your crops.
