    50 sal pahale dhokha banate the. Only besan ata sour buttermilk sugar salt chili crush harad. Same method. But on top of it only tadaka. No water etc
    In pune the price was 10 paise one piece. Golden days.

    I always used to think how the hell they made dhokla without eno and soda during old times and at home...
    Obviously,mom ke zamaane ke gharo mein ganta eno ye sab daalte hai...
    Toh maine bhi overnight rakkhe banaane ka socha tha...

    Thank you so much for this recipe! Almost every recipe of dhokla in youtube uses soda or eno or something like that. Even in those recipes where the batter is fermented. I am glad to have found this one. Just one piece of feedback: you're adding ingredients before mentioning it in your audio. It would be better if your actions in the video matched what you were talking.

    Finally traditional dhokla without soda eno yeast. Loved Amchur idea instead of lemon. Just one doubt. Can we not put salt sugar ground chilli ginger and haldi to the mix during fermentation itself ? Mix karna aasaan hoga na?

      Salt will slow down fermentation process

      @@naziashamim8942that’s not true. Idly dosa batter mai salt daalo toh fermentation zyada hi jaldi ho jaata hai. However if not controlled it also becomes sour😅

    I tried it this way and it turned out very well. But I made a few changes:
    1) I used idli batter (2+¼ cup) with 1 cup besan (my mom said she used 1 portion urad dal to 4 portion rice)
    2) used 2 tbsp curd
    3) Added a tsp baking powder
    4) I like my dhokla juicy, so used 4 small glasses of water to make that juice, 4tbsp sugar that way the whole things gets soaked.
    (I used just 3 glasses but the insides of the dhokla didn't soak and 5tbsp sugar which i thought was a bit too sweet but still it was really good)
    The rest I followed as it is in the video

    Did you cover to cook only after 10 minutes of cooking on high? Turn heat down and only then cover? Also can you make in steamer pot with multiple thalis? Or in pressure cooker without whistle?

      Yeast will develop on its own just like idli batter...you don't have to add yeast

    One tip, always grind with soaked water. It helps with fermentation.

      Nope. It contains phytic acid of the raw dals and rice which will prevent the absorption of nutrients

      She is adding rice. Rice is the one that ferments. That's a good addition to the recipe

    I followed exact procedure but batter didn't ferment and my dhokala became hard .

      In winters the fermentation doesn't take place as in summers to facilitate that process add 1 tbsp of curd and put it in a warm place to ferment

    I made it twice but it didn't worked
    Dhokla doesn't come out to be spongy
    It gets rubbery 😢😢😢😢
    I will not make now 😢
